This ferocious-looking wolfish gets its name from the sharp, protruding teeth it uses to feast on lobsters, clams and other shellfish. Found from southern New England to Greenland and the Barents Sea, the bottom dwelling cold water creature is primarily a bycatch of trawl fisheries targeting cod, haddock and other ground fish. Iceland, which has a directed fishery for the species, is the largest producer. Imports also come from Canada and Norway, which is developing wolfish-farming operations. The striped wolfish is one of three Atlantic species, which also include the northern and the spotted wolfish.
Wolffish has long been held in high regard by European chefs, who find it an acceptable alternative to Dover Sole. The lean pearly white flesh of the wolfish has a firm texture and a mild sweet flavor, sometimes likened to lobster. The meat is a flake similar to cod’s but not as large. Wolffish skin is edible, but since there are no scales, this species cannot be kosher.
Not as firm as monkfish nor as delicate as sole, the versatile wolfish holds together well and can be cooked successfully by many methods. It’s excellent sautéed and sauced, or encrusted in herbed mustard and baked. The fish is a good addition to bouillabaisse, and with the skin on (to prevent sticking) it is even grill-friendly.

Wild Isles Ocean Trout

Crawfish prices are stable this week. Mother’s Day and Memorial Day are the next big holidays for crawfish- plan ahead! We are currently grading our crawfish so that you have our washed Quality Grade and our washed Select Grade. Crawfish delivery days are Tuesday-Thursday and Saturday.

Rough weather stalled most of the Gulf Coast fishing, we are expecting more fish by the end of the week. Whole fish ranging in size from 1-2, 2-4 and 4-10.

The Texas public fishing grounds are closing on April 30th. Shell stock will start to tighten up as we move closer to the summer months. We have standard gallons, select gallons and oyster jars.

Wild Salmon
Yakutat’s Troll King fishery re-opens May 1. So does the Washington Coast Troll King Fishery. Copper River should open around may 15th for Sockeye, early june there will be sockeye available from other areas of Alaska.
Scallops
Scallop prices are holding steady this week. We expect decent supplies for the coming weeks.

Tuna is short in the market- prices are creeping up. We will have great 2+ and #1 h&g fish later this week.

Grouper
We have red grouper available this week. This is the time to get grouper on your menu!

Black Drum
Drum is arriving on Thursday from Hackberry, LA. Heavy rains kept most boats docked earlier in the week.

Domestic Crabmeat prices are up, and availability is very poor. This time of year is very difficult for all crab sources.

Seabass
We have a variety of seabass options. We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are moving up and that trend will continue for awhile.
