tilefish

Tilefish

Known as the “clown of the sea,” the tilefish looks very tropical but can be found from Florida to as far north as Nova Scotia. All tilefish are sold fresh, graded, and priced by size – the bigger the fish, the higher the per-pound price.  However, the fact that smaller tilefish are less expensive than large does not mean you’ve got a bargain. The smaller fish have a shorter shelf life, and their flesh tends to be softer. Tilefish yield thick fillets with a row of pinbones. The raw meat is pinkish-white but cooks up white with a firm, flaky texture. The flavor is mild but distinctive, often compared to lobster or crab, which is not surprising, since the tilefish’s diet is largely crustaceans.

Due to its mild taste and firm texture, tilefish offers chefs many options. It holds together well, making it good in soups and stews, but usually pan searing is the choice of methods. Cook the thick fillets at a high initial heat to help seal in the juices and keep the meat moist.

Salmon
Chilean salmon prices are improving.  We are expecting the trend to continue through the wild salmon season.  We are also getting in large whole salmon from the North Sea (country of origin can be Scotland, Faroe Islands, or Norway).  The shortages in Europe appear to have stabilized a little as well, but we are only seeing moderate improvements in price.  Ask your rep about New Zealand Farmed Ora King Salmon.

____

Gulf Oysters

Summer is here and oysters will continue to be tight.  Public seasons are closed, forcing our vendors to turn to their private leases.  This means that there are fewer areas to fish from and a more limited supply to sort through.  We will continue to support our loyal customers, as always, through this challenging time.

___

American Red Snapper

Product continues to be tight, but we do have them.

Though price has increased, demand for scallops has not decreased in the market.  We continue to have the larger product available but also offer a U/12 product for customers who are more price-sensitive.

Our farmed striped bass is from right here in Texas.  It is harvested, transported, prepared, and shipped under controlled temps.  This increases the quality and shelf life for you.
