Wild Coho Salmon

Coho salmon are sometimes called silver salmon or “silvers” because of their especially silver skin. The certified sustainable coho salmon with its orange-red flesh, firm texture, and delicate flavor has a wide consumer acceptance. Coho’s oil content makes it a great fish for grilling. Coho salmon is found throughout the coastal waters of Alaska and British Columbia and up most clear-running streams and rivers.

Gulf Oysters
Galveston Bay is shut down due to water testing.  A trace amount of red tide was found, and the Texas Health Department wants to make sure everything is safe.  If you remember last year, almost the full Texas coast was closed for several months for testing.  However, with all the fresh rain keeping the salinity low, I am hoping the closure will only last two weeks.  On top of that, we are seeing the usual effects of the summer heat.  Oysters are not filling out and there is dead loss.  This is also due the drought last summer.  Oysters take 18 months to mature.  We will keep you posted on any further news about the closure.

American Red Snapper

We will be receiving a nice shot of American red snapper this week.

Wild Coho Salmon
 

It is coho season now!!!  Sockeyes are over for the year.

Swordfish

Prices are right and production is rolling.  Take advantage of this while it lasts.

Grouper

We will be receiving some beautiful red 10-20 grouper this week.  This is great for bar food and center of the plate applications.

Whole Salmon
We will be receiving North Sea whole salmon – Norwegian, Scottish, and Faroe Island – for the weekend.

Trout 6 oz Natural Cut

We will start bringing in this product as a great lunch item for your menu or special board.  Is has a great presentation and good food cost.

Striped Bass

Our farmed striped bass is from right here in Texas.  It is harvested, transported, prepared, and shipped under controlled temps.  This increases the quality and shelf life for you.

Halibut

We have some beautiful halibut in.  Keep it on the special board; it won’t be around forever.

Redfish

Production is still tight, but we are receiving all we can.

Black Drum

Summer is here, and drum prices are up.  The product is beautiful and still at a nice price, just a little more than before.

Tuna

Prices are holding steady, but quality is nice.

Mahi Mahi

I am ready for the new mahi season.  I am hearing that this will be a good year, but I heard that last year.  In reality, last year was a good season, but since all the frozen producers’ inventories were depleted, they were paying record prices for the fresh.  Let’s hope their freezers are full this season.  The mahi usually begins to run in late September/October.

Fresh Crabmeat

Fresh domestic crab meat is tightening up a little.  August is typically a rough month, so we hope to continue to see plenty of crab meat in the next few weeks.
Steelhead
Steelhead will not make it in until Monday.

Marlin

We will have a nice shot of marlin for the weekend.

Domestic Catfish

Prices are nice and production is good on 5-7 sizes and up.

Scallops

Pricing is steady and quality is great.

Scottish Salmon Fillets

Prices are steady, and the product is excellent.

Mongchong, Opah, and Barracuda
