We will be receiving some fantastic domestic swordfish form the famous Eagle Eye 2 boat, known for their outstanding quality. Prices are higher than the South American fish, but you will see why. Get it while it lasts!!!
The colder the weather, the less and less fresh domestic crabmeat we will see. We can offer beautiful frozen jumbo and lump crabmeat until the catches get better. We also may be able to get Mexican as well. Please contact the sales team for information.
Salmon fillets remain constant this week, but expect prices to begin to rise. Christmas time causes the farmers in Chile to charge more because of demand. It is very frustrating.
Tuna is very tight this week. Prices are up due to light catches. Rough weather in the Gulf has hurt production, which places a larger demand on the other areas in the world.
Steelhead is a great feature for your menu. It is affordable and can be used in a variety of cooking methods.
We have fresh farmed Norwegian 12-22 lb whole halibut coming in for the weekend. This fish is a beautiful substitute for wild halibut while is not available. We will also have refreshed available at a more affordable price.
Oysters are looking good and in good supply. Hopefully this will not change any time soon.
Farm raised redfish is perfect for your customers who care about the environment. It is a perfect sustainable fish for any occasion. Redfish on the half shell is one of my favorite dishes.
Quality and pricing have been steady for a while now. I don’t see any changes in near future, but Lent is around the corner.

Green, Golden, and Ruby trout
We are finally seeing a better supply of trout from our vendors. Hopefully the shortages are over.
We are seeing more grouper now. We will have some beautiful 10-20 black grouper coming in for the weekend!
Fresh and frozen tilapia have both seen price increases. The increase on the fresh is due to higher feed and fuel costs. The frozen is a combination of higher costs and flooding in Indonesia and China, where the majority of frozen tilapia is produced.
This is a fantastic fish. Great blackened, fried, baked, grilled, or any way you choose. It is also great on the food cost!!!
