Native to the western Atlantic Ocean the lane snapper is sometimes mistaken for a red snapper. It’s distinctive yellow coloration distinguishes lane from red snapper. Colors varies in a lane snapper from rosy red to a dusty yellow green. Horizontal yellow stripes on the side of the fish with can be masked by horizontal blotching. A dark eye sized spot can be found just below the dorsal fin. It’s tail is reddish with a splash of black.
Lane snapper has delicate flesh with a delicate flavor. The flesh is near white with darker areas just under the skin, but these do not have a strong taste. Use delicate sauces so as not to overwhelm the flavor.

Extra Jumbo Redfish (3lb and up) availability is improving. The fish are coming in around 3 to 3.5 lbs. We are seeing some shortages on the smaller sizes, Jumbo Redfish (2.5-3 lb.). Chilean Salmon pricing is holding steady. However, Canadian and North Sea Salmon prices are on the rise. This is due to weather and holidays.
This salmon is naturally raised; Antibiotic Free, Chemical Free, Preservative Free, and Hormone Free. The feed is comprised of all natural and sustainable resources. And unlike other farm raised salmon Wild Isle Salmon is raised in the open ocean of the Shetland Islands, and not in a Loch or Bay like other farms raised salmons.
