Fresh Arctic Char…
Fresh arctic char is a member of the salmon family and is similar in taste and texture to trout and salmon. It has a rich taste with a flavor profile somewhere between trout and salmon with a fat content close to that of sockeye salmon. The flesh ranges in color from light pink to deep red with moderately firm but fine flakes. Char’s body shape resembles salmon, and they have silvery skin with flecks of pink along the sides and splashes of green and blue along their back. Arctic char is delicious and popular choice for any menu board.

They are scarce this week, but we were able to get our hands on some. The name sells itself. This fish is perfect for special boards or an addition to you menu. Try it once, and you will be hooked.

We currently have farmed Norwegian 12-22 lb whole halibut. This fish is a beautiful substitute for wild halibut while is not available. We will also have refreshed available at a more affordable price.

Fresh and frozen tilapia have both seen price increases. The increase on the fresh is due to higher feed and fuel costs. The frozen is a combination of higher costs and flooding in Indonesia and China, where the majority of frozen tilapia is produced.
This is a fantastic fish. Great blackened, fried, baked, grilled, or any way you choose. It is also great on the food cost!!!
