Redfish or Red Drum is a delicious fish that we get farm raised where they use no hormones, no antibiotics and no mercury. They are bred and hatched on a family owned and operated inland farms located between Port O’Connor and Palacios, Texas. Fingerlings mature in earthen ponds filled with saltwater sourced from the Matagorda Bay system and saline aquifers. Water quality is monitored around the clock to maintain the healthy growing environment that produces a premium fish.
The most distinguishing mark on the red drum is one large black spot on the upper part of the tail base. Having multiple spots is not uncommon for this fish but having no spots is extremely rare. The color of red drum ranges from a deep blackish, coppery color to nearly silver. The most common color is reddish-bronze.
The meat is light and white with a mild taste, but not bland. It has a robust texture that adapts well to many cooking methods. Grill, steam, bake, pan sear or stir fry…it’s delightfully versatile. A 6 oz. serving contains 220 calories and no trans fat with 35 grams of protein and many beneficial nutrients including Omega 3 and 6 fatty acids, calcium, and iron.

Wild Isles Ocean Trout

All Natural Ocean Trout (Steelhead) begins its life in fresh water land based closed containment recirculation tanks, once these rainbow trout reach maturity, they are then transferred to wild water off the island of Skye in Scotland where the continue their grow-out in salt water until they reach a harvest size of 7-12 lbs each. The result is an amazing sashimi quality ocean trout with a higher fat content then salmon and a great flavor that lends itself to any type of cooking or smoking. This sustainably raised ocean trout is a more sustainable and lower costing than a similar Tasmanian Ocean Trout.

Flounder

East coast flounder is rolling in this week. As the Gulf shuts down plan on moving to these great fish out of the Carolinas.

East Coast Oysters 
Winter is finally setting in and starting to affect availability. We’ve had a few farms drop off: On the Cape, Rock Harbor is buttoned up for the winter and Pemaquids from Maine are finished too. In Canada St. Simon is dealing with ice that is too thick to harvest by boat, and too thin to harvest from above. Once the ice thickens they will start harvesting through the ice with chain saws. Don’t panic yet, there are still plenty of other choices for now.

Redfish & Striped Bass 
The trend continues with jumbo sized redfish (2.5-3lb) being extremely tight right now, Extra Jumbo (3lb and Up) are in decent supply. Striped Bass is a better option this time of year..

Chilean salmon prices are starting to climb as expected as we make it through the holidays. We also stock North Sea and Canadian product in whole and fillet form.  Check with your sales rep for case discounts if you are a volume user

Gulf Oysters 
Gulf sack prices are on the rise, supplies are steady but not abundant, we are seeing a good supply of gallons with most of our oyster coming out of Texas. Select gallons are a great product for oyster stuffing.  Prices are down.

Snapper 
American Red Snapper and Lanes are both tight this week. Call your sales rep for all information.

Scallops 
Scallop prices are slightly up as is normal this time of year. We are exploring every option to get the best price and best quality product.  Please give us feedback on the new beautiful product we are buying straight from the boats.

Tuna 
Tuna will most likely be in tight supply the beginning of next week. The holidays will slow fishing down and that will drive prices up.

Sword 
Sword has been short all week, prices are still on the rise this week. Expect shortages in the coming weeks.

Grouper 
The grouper supply is decent this week and prices are a little better this week.  Let your sales rep know if you are interested in this product.  The grouper supply will continue to be tight as the boats are fishing for octopus.

Black Drum 
Cold weather has the drum running! We are seeing beautiful fish from Louisiana expect good supply through the coming weeks. Don’t miss out; get with your sales rep for an order

Fresh Crabmeat 
Domestic Crabmeat prices are up, and availability is very poor. This time of year is very difficult for all crab sources.

Seabass 
We have a variety of seabass options.  We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are moving up and that trend will continue through the holidays.
