Redfish

Redfish or Red Drum is a delicious fish that we get farm raised where they use no hormones, no antibiotics and no mercury. They are bred and hatched on a family owned and operated inland farms located between Port O’Connor and Palacios, Texas. Fingerlings mature in earthen ponds filled with saltwater sourced from the Matagorda Bay system and saline aquifers. Water quality is monitored around the clock to maintain the healthy growing environment that produces a premium fish.

The most distinguishing mark on the red drum is one large black spot on the upper part of the tail base. Having multiple spots is not uncommon for this fish but having no spots is extremely rare. The color of red drum ranges from a deep blackish, coppery color to nearly silver. The most common color is reddish-bronze.

The meat is light and white with a mild taste, but not bland. It has a robust texture that adapts well to many cooking methods. Grill, steam, bake, pan sear or stir fry…it’s delightfully versatile. A 6 oz. serving contains 220 calories and no trans fat with 35 grams of protein and many beneficial nutrients including Omega 3 and 6 fatty acids, calcium, and iron.

Notes from our buyer

Crawfish

Crawfish catch volumes are increasing each week as the average high temps in South Louisiana is staying around 70 degrees with mild overnight lows. We are rotating the ponds we are fishing to ensure the proper growth rate of the crawfish and not to deplete the supply early.  We expect demand to increase along with the catch as we approach Mardi Gras and Ash Wednesday.

 

Halibut

East Coast Halibut availability and pricing is looking good. New fish arrived this week. Call your sales rep for pricing and availability. The Alaskan Halibut season will open on March 11th.

 

Mahi

Mahi prices are creeping up a little with decent availability. Call your sales rep for pricing and availability.

 

American Red Snapper
New fish just in from Galveston, TX. Whole fish ranging in size from 1-2, 2-4, and 4-8 are available with good availability.

 

Fresh Crabmeat
We have Fresh Domestic Crabmeat and Fresh Non Domestic Crab from Mexico. Call your sales rep today for pricing and availability.

 

Clams & Mussels

We have Manilla Clams, Littleneck Clams and Pei Mussels arriving twice a week. Call your sales rep for availability.

 

Icelandic Cod 

The Fisherman Strike in Iceland continues. However, availability is improving and prices are coming down slowly.

 

Artic Char

Arctic Char is a unique strain of saltwater char sustainably farm-raised in Iceland. Often compared to salmon and trout, Arctic Char has a distinct, sweet buttery flavor and firm pink flesh that sets it apart from other fish on the market. We get this in twice a week, ask your sales rep for more info.

East Coast Oysters
We have a great selection of oysters this week. Make sure you are on our East Coast oyster list that we send out every week. We have access to several varieties each week.

 

Gulf Oysters

Availability has improved and we are getting in a good amount of Gulf Oysters. So far Gulf sack prices are holding steady. Gulf sacks and gallons are available.

 

Redfish & Striped Bass
Extra Jumbo Redfish (3lb and up) have a good availability right now. The availability on jumbo sized redfish (2.5-3lb) is starting to tighten up due to the colder temperatures.   Striped Bass is a great option this time of year as well.
 

Salmon
Chilean Salmon, Canadian Salmon, and North Sea Salmon prices all continue to stay up. Not sure when this trend will end, but we expect it to continue for the next few months. The increase on Chilean Salmon is attributed to several factors including, last year’s historic algae bloom, the current exchange rate, and slower growth rates.

 

Wild Isles Organic Salmon 

This E.U Certified Organic salmon is unlike any other farm raised salmon where it is raised in the open ocean of the Shetland Islands, and not in a Loch or Bay like other farms raised salmons. Its certified sustainable aquaculture methods are free from all antibiotics, hormones, & GMO, and its feed is certified organic and uses no synthetic coloring or pigments added.

Scallops
U10 Dry Scallop prices are holding steady. We expect decent supplies for the coming weeks.

 

Tuna
Prices are up due to limited catches from the lunar cycle. We have great 2+ and #1 fish arriving this week.

 

Grouper
Red, black, and yellow edge grouper are available in the market, although limited. Call your sales rep for prices and availability.

 

Black Drum
Good fishing weather out of Hackberry, LA has got us some good landings on drum this week. Call your sales rep for pricing and availability.

 

Seabass
We currently carry H&G 10-15 kg Chilean Seabass. Seabass prices are on the rise. And we don’t see them coming down anytime soon.

 

Swordfish
Swordfish prices are up, with the same trend as the tuna. Fish will be limited this week.

 

Rainbow ‘Green’ and Ruby Trout

The larger sizes of the Ruby Trout are more available than they have been. For the next few months 8-10 oz and 10-12 oz Ruby will be available, but limited.

 

Wild Isles Ocean Trout

The All Natural Ocean Trout (Steelhead) is an amazing sashimi quality ocean trout with a higher fat content then salmon and a great flavor that lends itself to any type of cooking or smoking.
