Swordfish
Swordfish is a highly migratory, predatory fish characterized by a long, flat bill. They are harvested worldwide in deep temperate and tropical seas year-round. Swordfish is low in calories (130 calories per 3 oz.) and high in protein (22g). It is mildly sweet with a moist, meaty texture and moderately high fat content. The flesh can range from white/ivory to pink or orange. The color variations do not reflect quality. All swordfish meat turns beige in color after cooking.
FDA note: Swordfish have high levels of methyl-mercury, so the FDA advises that pregnant women, nursing women, women of childbearing age, and young children avoid eating swordfish.

Notes from our buyer
Crawfish numbers year over year are still up, but this past few weeks we’ve seen a drop in production. This week catch has stabilized. We are still seeing good numbers for this time of year. Prices holding steady.
East Coast Halibut availability is tightening up due to limited landings. We have new product arriving this week.

Icelandic Cod
Availability is looking good this week. With have shipments arriving twice a week.

Arctic Char is a unique strain of saltwater char sustainably farm-raised in Iceland. Often compared to salmon and trout, Arctic Char has a distinct, sweet buttery flavor and firm pink flesh that sets it apart from other fish on the market.

Some brutally cold weather has limited a lot of production in some areas. Despite the cold weather, we have a good selection arriving this week. A reminder that Malpeque and Conway Oysters are not being harvested for about two months.

Gulf sack prices are coming down a bit with a good supply. We are also seeing a good supply of gallons with most of our oysters coming out of Texas.

The availability on jumbo sized redfish (2.5-3lb) continues to be limited Extra Jumbo (3lb and up) are in decent supply and will be more available than the smaller sizes. Striped Bass is a great option this time of year as well.

Chilean Salmon prices are holding steady this week. North Sea salmon prices are dramatically higher due to Lent and the Chinese New Year. There are a few Norwegian farms that are not producing, and adding on the increased demand, has the prices very high.

We have a variety of seabass sizing options. We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are continuing to move up.

The larger sizes of the Ruby Trout are more available than they have been. For the next few months 8-10 oz and 10-12 oz Ruby will be available, but limited.
The rainbow trout supply seems to be stable. The variety of the cuts and sizes of this fish never cease to amaze me. There are many options to meet your menu specifications.

The All Natural Ocean Trout (Steelhead) is an amazing sashimi quality ocean trout with a higher fat content then salmon and a great flavor that lends itself to any type of cooking or smoking.
