Tilefish
Tilefish is an extra lean white meat fish with a firm, mild flavor. Adults weigh an average of 10-25 pounds, and the fish we just got are weighing in between 8 and 12 pounds. They are widespread in tropical and temperate waters. The golden tilefish is the most colorful fish with a blue-green back that fades to a pearly white belly. It is touched with red and blue iridescence, highlighted by irregular yellow-gold spots, and ocean-blue under the eyes. Combined with these colorful markings is the adipose flag or crest on the head. The blueline tilefish is similar in taste to the golden tilefish, but it is not as colorful and lacks the adipose flag.

Mahi Mahi
Prices are still looking good and quality is excellent. Costa Rica is freezing most of its catches, so prices are staying consistent. Other areas are lower in price, but high in quality.

Oysters are looking great and are abundant. It’s time to run some happy hour specials.
Salmon fillets
We’ve got Chilean 3-5, Bay of Fundy, and North Sea fillets.

Branzini
We have some nice 400-600 gram whole fish. This is great for serving whole, or we can cut it into fillets for you.

We can get some nice Lucky Lime, Pickle Point, and Raspberry Point, all from the east coast. We also have an East Coast oyster list; get with your sales rep if you’d like to receive that list via email.

There is a little more swordfish in the market this week. Prices are much better, but still on the high side.

Looks like grouper is being caught more than before. Quality is excellent.

Rainbow ‘Green’, Golden, and Ruby trout
Green trout is what the guys on the farm call the regular rainbow trout. Since they have ruby and golden as well, it is just a term they use to distinguish between the three. Our ‘green’ trout is what every sales person calls rainbow trout. Red and golden continue to be very tight. The end is not in sight yet.
