King Clip…
Kingklip (or king clip) is a southern hemisphere fish found in South African waters. Part of the eel family, the golden kingklip’s elongated body can weigh up to 25 kilograms and measure from 50 to 120 centimetres. Contrary to other types of eel, however, its body is more fish-like, becoming narrower and compressed near the tail. Kinklip is a nice firm, white meat that makes good ceviche, as well as being delicious fried, grilled, or broiled.

Crawfish
Crawfish season has started, and they are plentiful and delicious. We saw a price drop last week due to the amount of excess crawfish on the market. It’s likely to see another price drop soon assuming the catch stays up! As for sizing the crawfish, all are still straight run because the shells are too soft to grade. Overall the size of the crawfish are mostly medium with a few larger crawfish mixed in the sacks.
Gulf Oysters
Word on the street is that the Texas waters will open in February. Don’t hold your breath, but this is great news. With zero harvesting in these waters over the past several weeks, the oysters should be excellent. I will keep you posted.
Amberjack
We received a nice shot of domestic Amberjack. There is not a lot out there, so get it while it lasts.
Fresh Crabmeat
Our fresh crabmeat from Venezuela and Columbia is awesome. The meat is beautiful and fresh and the shelf life you will have will knock your socks off. If you have not tried it, get on the bandwagon. This is a year round, high quality product that will keep you in the fresh crab business.
American Red Snapper
The name sells itself. This fish is perfect for special boards or an addition to your menu. Try it once, and you will be hooked.

This Gulf fish is short and round. The fillet is off white, similar to our farmed redfish fillets and drum. The cost is nice, so help your food cost with this beautiful fish.
Yellowfin Tuna
The market is still horrible for tuna. Prices are crazy and availability is LOW. However, if you have seen our tuna lately, you can see the quality is outstanding.
Steelhead
Steelhead is a great feature for your menu. It is affordable and can be used in a variety of cooking methods.
Halibut
We are moving into the refreshed 10-20 United States wild halibut until fresh is back. We have a small shot of fresh coming in from Nova Scotia.
Redfish
Farm raised redfish is perfect for your customers who care about the environment. It is a perfect sustainable fish for any occasion. Redfish on the half shell is one of my favorite dishes.
Domestic Catfish
Quality and pricing have been steady for a while now. I don’t see any changes in near future, but Lent is around the corner.
Scallops
Scallop prices are steady right now. Product looks great and tastes even better.
The quality of our Scottish fillets is outstanding! Prices should remain constant for the next several weeks.
Striped Bass
Beautiful farm-raised Texas striped bass is a perfect sustainable option for any menu! The fish is kept below 38 degrees from the time it is harvested from the water to the time it hits your door.
Fresh Crabmeat
We received our first batch of Venezuelan crabmeat this week. The product looks great and should allow us to have a year-round source of fresh crabmeat – jumbo, lump, and fingers!!!
Mongchong, Opah, and Barracuda

Green, Golden, and Ruby trout
Trout projections look good on the green trout. The golden and ruby are much better than before, but could still be a little tight.
Grouper
Grouper is a fantastic fish for anyone looking for something different. A blackened grouper sandwich is a perfect bar item or grilled with a fancy sauce for a center of the plate entrée.
Tilapia
Fresh and frozen tilapia have both seen price increases. The increase on the fresh is due to higher feed and fuel costs. The frozen is a combination of higher costs and flooding in Indonesia and China, where the majority of frozen tilapia is produced.
This is a fantastic fish. Great blackened, fried, baked, grilled, or any way you choose. It is also great on the food cost!!!

Do you know who (Fish Market or Grocer) in Austin, TX that offers King Klip fish for purchase. We love it and find it in abundance when we travel to S Africa but can’t seem to find it in our hometown?
