Trout is the name for a number of species of freshwater and saltwater fish. They are classified as an oily fish that live in different environments and can have dramatically different colorations and patterns. Mostly, these colors and patterns form as camouflage based on the surroundings and will change as the fish moves to different habitats.
Tasty no matter how it is prepared, freshwater trout is a delicately flavored ruby red or white-meat fish whose pure flavors are complemented by even the simplest preparations. The difference between white and ruby trout is only skin deep. Trout farms achieve “ruby-ness” by feeding the fish natural color enhancers; color does not affect taste.
Rainbow trout farming began in the late 1800’s commercial really began to take hold in the 1960’s. Wild Steelhead is the same as a rainbow except it lives in ocean and migrates to fresh water streams to spawn.

East Coast Oysters
Mayflowers and Riptides are a great option this week – great size, consistency, and quality. Be sure to sign up for the weekly East Coast Oyster list and let your Fruge sales rep know if you need flavor profiles or are requesting a specific oyster. Pre-orders are the best way to ensure availability of your favorite oyster. The Vibrio season is upon us. Each state has their own plan to ensure oysters are being properly handled throughout the distribution chain. Only accept product when the temperature is 45° or less, refrigerate all shellfish immediately, and ensure product is properly iced. Keep shellfish tags on or with the original container and on file for 90 days.

This product is grown right here in Texas, which gives you the freshest fish possible. We order this product straight from the farm, so keep us informed if your usages change, so we can be sure to keep you supplied with the freshest product.

Chilean salmon prices are maintaining their lows. Based on previous year’s data, the prices should stay low through October/November. North Sea salmon prices and Canadian salmon prices are still moving down. Check with your sales rep for case discounts if you are a volume user. Ask your sales rep about our whole Bakkafrost product and let them know if you would like to schedule a cutting.

We are getting the volume of half shell that we need at this time, however, they are smaller due to the warmer waters.

We have 1-2, 2-4 and 4-10 American Red Snapper in house. We also have a beautiful 2-4 Lane Snapper. We also have Bee Liners this week, also known as Vermillion Snapper. Call your sales rep for all information. Snapper prices are stable and we should have all the product you need this week.

The halibut market is nearly non-existent. Alaska landings have all but ceased. We will be bringing in a small quantity of East Coast Halibut, but it is expensive.
Scallop prices are stable. We are exploring every option to get the best price and best quality product. Please give us feedback on the new beautiful product we are buying straight from the boats.

Tuna prices are stable on 2+, but #1 product is up a little. Tuna prices should improve next week based on the availability projections on the lunar calendar.

Grouper
The grouper supply seems to be stable this week. The prices are up a little on the pre-cut fillets and whole fish.

Fresh Crabmeat
Domestic product has been plentiful and the prices are stable.

We have a variety of seabass options. We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are holding steady.
