Corvina

Corvina

Silvery gray in color and a member of the croaker family, corvina tastes like or is similar to sea bass. It has firm, white flesh and a mild taste. Some species of corvina are orangemouth corvina, yellowfin corvina and golden corvina. They are available year-round and are wild-caught with a long-line. A delicious must for all menus.

Wild Salmon

Kings are limited and prices are high.  We will have Alaskan sockeye available for the end of the week.

Amberjack

Our Louisiana Gulf amberjack is out of season as the quota has been harvested.  We will let you know as soon as it re-opens.

Halibut
Very few landings over the last two weeks have the price of this fish sky-rocketing with fishermen focusing on salmon.  New boats should be landing anytime, and we will have more Alaskan product for the weekend.  In the meantime, we will be offering east coast halibut.

Soft shell crabs
We have some beautiful soft shells – whales and jumbos – for your feature board.  Get them while the season lasts.

Steelhead Trout
Shortages from Chile are causing this product to be more expensive and less available.

Cod, Sole, and Haddock
We bring these delicate fish direct to our customers from Boston and only order what you need in order to provide you with a beautiful, fresh product every time.

Salmon
Global demand coupled with lower production has salmon prices rising, especially in Chile.  Several farms have overharvested to avoid the ISA and other issues.  This has left these farms with little to no product.  Several large frozen programs continue to scoop up a large amount of salmon as well.  We are hoping to see more production in the next two months, but we will have to wait and see. We are also getting in large whole salmon from the North Sea (country of origin either Scotland, Faroe Islands, or Norway).  Recent shortages in Europe have also been driving up the price.

Gulf Oysters

Summer is here and oysters will continue to be tight.  Public seasons are closed, forcing our vendors to turn to their private leases.  This means that there are fewer areas to fish from and a more limited supply to sort through.  We will continue to support our loyal customers, as always, through this challenging time.

American Red Snapper

Product continues to be tight, but we do have them.

Scallops

Looks like U/10 dry scallops are going to be tight for the next two years.  The real value is in the U/12’s.

Tuna

Our tuna is great. Prices are very nice right now.  Get it while it lasts.

Mahi Mahi

Mahi continues to be tight and the prices are rising.  Cheaper product is available from boats that have been on the water longer, but we will continue to offer the freshest product available to our customers.

East Coast Oysters

Blue Points are back.  Several other varieties of east coast oysters are also available.  Ask your sales rep about your options, and they can also assist you with flavor profiles.

Grouper

Grouper is really coming in now.  Prices are nice.

Our farmed striped bass is from right here in Texas.  It is harvested, transported, prepared, and shipped under controlled temps.  This increases the quality and shelf life for you.

Redfish

This is a fantastic fish for any application and is consistently the freshest fish we have.  This product is a little tight right now, so make sure we know what your needs are.

Black Drum

The black drum will be harder to get as the waters warm up and they move to deeper / cooler water.

We are seeing some domestic meat now.  Get your pre-orders in, and we will do our best to fill them.

Lane Snapper

Lanes are here and are beautiful.

Domestic Catfish

Prices are steady but quality is great!!!  Farmed right here in Texas.

Mongchong, Opah, and Barracuda

Looking for something from Hawaii???  We have a great partner over there that supplies us with fantastic fish from the Hawaiian waters.

Seabass

We have a variety of seabass options.  We have H&G sized 20-30 kg as well as fillets cut from that size.  Get with your sales rep for details.

Rainbow ‘Green’, Golden, and Ruby trout

Green trout is what the guys on the farm call the regular rainbow trout. Since they have ruby and golden as well, it is just a term they use to distinguish between the three. Our ‘green’ trout is what every sales person calls rainbow trout.
