Grouper

Grouper belongs to one the largest fish families, the seabass family. Grouper is found in the waters of Florida and the Mid-Atlantic states as well as South America, Central America, and the Gulf of Mexico. Chances are if you have eaten grouper it has been red grouper. This fish has a mild but very unique flavor, somewhere between bass and halibut. Red grouper is not quite as firm and has a milder, sweeter flavor than black. Grouper meat cooks up very firm with big flakes, and it holds its moisture better than many other fish. Since red grouper is a leaner fish, you might need to baste it when broiling or baking it.

We are still receiving Copper River sockeyes, but we are also seeing some early Snow Pass coho.  We will have both this week.

Prices are right and production is rolling.  Take advantage of this while it lasts.

Grouper

We will be receiving some beautiful red and Yellow Edge grouper for the weekend.

Gulf Oysters

Summer temps are here and causing the yields on the oysters to decrease.  That means the meat in the shell will be smaller and the gallon oysters will be as well.  This should continue until the temp begins to drop.

Whole Salmon
We will be receiving North Sea whole salmon – Norwegian, Scottish, and Faroe Island – for the weekend.

Trout 6 oz Natural Cut

We will start bringing in this product as a great lunch item for your menu or special board.  Is has a great presentation and good food cost.

Striped Bass

Beautiful farm-raised Texas striped bass is a perfect sustainable option for any menu!  The fish is kept below 38 degrees from the time it is harvested from the water to the time it hits your door.

Halibut

We have some beautiful halibut in.  Keep it on the special board; it won’t be around forever.

Redfish

Redfish production is tight again.  We are receiving as much as we can from the farm, but they are not able to harvest all we are ordering.  Drum is an excellent alternative.

Black Drum

Summer is here and drum prices are up.  The product is beautiful and still at a nice price, just a little more than before.

Tuna

Tuna is more abundant this week.  Prices are nice.

Mahi Mahi

Mahi has tightened up this week.  Very little product available and prices are high.

Fresh Crabmeat

The season is upon us and availability is strong.

American Red Snapper

Fish are very expensive.  Quotas are tight and most boats are shrimping.  Hopefully we will see some relief soon.
Steelhead
We will be receiving some steelhead for the weekend.

Marlin

We will have a nice shot of marlin for the weekend.

Domestic Catfish

Prices are nice and production is good on 5-7 sizes and up.

Scallops

Prices are dropping a little with the new areas opening, but not much.

Scottish Salmon Fillets

Prices are steady, and the product is excellent.

Mongchong, Opah, and Barracuda
