Wild King Salmon

Wild king salmon, commonly known as Chinook salmon, is well known for its full, rich flavor and tender meat that always melts in your mouth. They’re the largest and scarcest of the five species of Alaskan salmon, bearing the highest amounts of Omega-3 oils of all of them. Because of this high oil content, they are considered to be the richest salmon in the world. Regardless of the color of their flesh, the flavor and texture of king salmon is pronounced with a buttery and delicate texture and large, soft flakes.

American Red Snapper

We will be receiving a nice shot of American red snapper this week.  Some are 4-10 and others are 10 up.  Very beautiful fish!!!.

Lane Snapper

We will have a nice shot of 2-4 and 4-6 lanes for the weekend.

Mangrove Snapper

We will be receiving some beautiful Mangrove snapper 4-6 for the weekend.

Wild Salmon
 

We are still receiving Copper River sockeyes, but we are also seeing some early Snow Pass coho.  We will have both this week.  Wild Kings are a little expensive, but should drop next week.

Swordfish

Prices are right and production is rolling.  Take advantage of this while it lasts.

Grouper

We will be receiving some beautiful red 10-20 grouper this week.  This is great for bar food and center of the plate applications.

Gulf Oysters

Summer temps are here and causing the yields on the oysters to decrease.  That means the meat in the shell will be smaller and the gallon oysters will be as well.  This should continue until the temp begins to drop.

Whole Salmon
We will be receiving North Sea whole salmon – Norwegian, Scottish, and Faroe Island – for the weekend.

Trout 6 oz Natural Cut

We will start bringing in this product as a great lunch item for your menu or special board.  Is has a great presentation and good food cost.

Striped Bass

Due to higher feed costs, the price of the bass will be up a little next week.

Halibut

We have some beautiful halibut in.  Keep it on the special board; it won’t be around forever.

Redfish

Due to higher feed costs, the price of the redfish will be up a little next week.

Black Drum

Summer is here and drum prices are up.  The product is beautiful and still at a nice price, just a little more than before.

Tuna

Tuna is more abundant this week.  Prices are nice.

Mahi Mahi

Mahi has tightened up this week.  Very little product available and prices are high.

Fresh Crabmeat

The season is upon us and availability is strong.
Steelhead
We will be receiving some steelhead for the weekend.

Marlin

We will have a nice shot of marlin for the weekend..

Domestic Catfish

Prices are nice and production is good on 5-7 sizes and up.

Scallops

Pricing is steady and quality is great.

Scottish Salmon Fillets

Prices are steady, and the product is excellent.

Mongchong, Opah, and Barracuda
