Ivory King Salmon

A white-king salmon is quite an oddity. It’s milder than red with a distinct flavor all its own. No one is sure why about only one in 100 wild kings is white. One theory is that they eat a different diet. The bright-red color of wild salmon comes from a diet of shrimp, krill, and crabs that contain carotenoids, which are natural pigments found in plants and animals. Beta-carotene, which makes carrots orange, is probably the most familiar one. Some scientists believe that white salmon eat mostly squid and fish, which have fewer carotenoids. However, the majority of scientists point to genetics instead. Since both white and red kings live in the same waters, it’s likely they would consume the same thing. Whether due to diet or genes, the fairer the rarer.

Copper River Salmon
 

We should see Copper River and other sockeyes in the market through July, but this will all depend on Mother Nature.  There are sockeyes coming from other areas like Prince William Sound, so if the price for true Copper River sockeye is too good to be true, it probably is.

Mediterranean Mussels

Our vendor on Mediterranean mussels will not be producing for a while.  We will inform everyone when production starts again.

Gulf Oysters

We are experiencing a price increase on gallon and jars.  The temperature is rising, and the meat in the oysters is shrinking.  This is typical and should only be until the weather cools down.

Whole Salmon
We will be receiving North Sea whole salmon – Norwegian, Scottish, and Faroe Island – for the weekend.

Trout 6 oz Natural Cut

We will start bringing in this product as a great lunch item for your menu or special board.  Is has a great presentation and good food cost..

Striped Bass

Beautiful farm-raised Texas striped bass is a perfect sustainable option for any menu!  The fish is kept below 38 degrees from the time it is harvested from the water to the time it hits your door.

Halibut

Halibut has become very tight at the first of the week.  I am trying to fly some in for the weekend.

Redfish

Redfish production is tight again.  We are receiving as much as we can from the farm, but they are not able to harvest all we are ordering.  Drum is an excellent alternative.

Black Drum

Summer is here and drum prices are up.  The product is beautiful and still at a nice price, just a little more than before.

Tuna

Prices are moving back up a bit with tuna catches being a little off.  We are coming up on a full moon on July 2nd, so keep your fingers crossed for better catches.

Mahi Mahi

Mahi has tightened up this week.  Very little product available and prices are high.

Fresh Crabmeat

The season is upon us and availability is strong.

American Red Snapper

This product is tight for a couple of reasons – the weather in the gulf is rough because of the storm, a lot of boats are shrimping, and some have filled their quotas.
Steelhead
We will be receiving some steelhead for the weekend.

Marlin

We will have a nice shot of marlin for the weekend.

Domestic Catfish

Catfish prices will drop next week.  Check out our prices if you are not currently using us.  Our catfish is farmed raised here in Texas.

Scallops

Prices are dropping a little with the new areas opening, but not much.

Scottish Salmon Fillets

Prices are steady, and the product is excellent.

Mongchong, Opah, and Barracuda
