swordfish

Swordfish

Swordfish is harvested worldwide in deep temperate and tropical seas. Swordfish is one of several large fish known as billfish. Highly recognizable due to its sharp, pointed bill, which it uses for protection and hunting its prey, swordfish is available year-round. Longlines are the most common gear for catching swordfish worldwide, but because of the by catch problems, it is preferred as “best choice” to be caught with harpoon and handline.
Swordfish is low in calories (130 calories per 3 oz.) and high in protein (22g). It is mildly sweet with a moist, meaty texture with moderately high fat content. The flesh can range from white/ivory to pink or orange. The color variations do not reflect quality. All swordfish meat turns beige in color after cooking.
FDA note: Swordfish have high levels of methyl-mercury, so the FDA advises that pregnant women, nursing women, women of childbearing age, and young children avoid eating swordfish.

Notes from our buyer

Live Crawfish

Dads love crawfish! We are heading into the last leg of the crawfish season, and this weekend is typically a big day for crawfish sales. Call in early to reserve you crawfish for this weekend!

____

Wild Salmon

The Copper River opened yesterday for 24 hours.  We should have fish to ship you on Friday depending on when it is available to ship.  There are other areas opening for sockeyes.  If the price is too good to be true on Copper River sockeyes, then they are probably not Copper River sockeyes.

____
Halibut
The halibut looks fantastic – size 20-40 directly from Alaska.

____
Soft shell crabs
The crabs are going through a hard molt.  This usually lasts for a week and a half.  Next week should be better for availability.  We have a few in the building, so please get with your sales rep quickly before they are gone.

____
Salmon
Global demand coupled with lower production has salmon prices rising, especially in Chile.  Several farms have overharvested to avoid the ISA and other issues.  This has left these farms with little to no product.  Several large frozen programs continue to scoop up a large amount of salmon as well.  We are hoping to see more production in the next two months, but we will have to wait and see.

____

Gulf Oysters

Summer is here and oysters will continue to be tight.  Public seasons are closed, forcing our vendors to turn to their private leases.  This means that there are fewer areas to fish from and a more limited supply to sort through.  We will continue to support our loyal customers, as always, through this challenging time.

___

American Red Snapper

Things have tightened up quite a bit in Mexico.  We will have some for the weekend.

___

Scallops

Looks like U/10 dry scallops are going to be tight for the next two years.  The quotes are shrinking, and the product projections are not looking good.  Prices have already begun to rise.

___

Tuna

Our tuna is great. Prices are very nice right now.  Get it while it lasts.

___

Mahi Mahi

Mahi has been tight this week.  Prices are stable.

___

East Coast Oysters

All the rain in the north east has caused the Blue Point production to stop.   Once the water levels get back to normal, production will be back.

___

Grouper

Grouper is really coming in now.  Prices are nice.

___

Our farmed striped bass is from right here in Texas.  It is harvested, transported, prepared, and shipped under controlled temps.  This increases the quality and shelf life for you.

Redfish

This is a fantastic fish for any application and is consistently the freshest fish we have.

___

Black Drum

Prices are steady now.  Product is fantastic.

We are seeing some domestic meat now.  Get your pre-orders in, and we will do our best to fill them.

___

Lane Snapper

Lanes are here and are beautiful.
___

Domestic Catfish

Prices are steady but quality is great!!!  Farmed right here in Texas.

___

Mongchong, Opah, and Barracuda
