Connecticut Blue Point Oysters

Blue Point oysters originated near the town of Blue Point, Long Island, situated on Great South Bay, New York.  In the early 1800’s they were famous for their robust, wild flavor and became the favorite oyster of Queen Victoria. Generally, Blue Point oysters have satiny, almost liquid meats with a high brininess and very mild flavor, but a genuine Blue Point oyster has a fresh, crisp, firm texture, with a sweet aftertaste. They are available from September through July.

Copper River Salmon
 

We should see Copper River and other sockeyes in the market through July, but this will all depend on Mother Nature.

Mediterranean Mussels

We have some very nice Mediterranean mussels in for the week.  They are a little different from the Canadian PEI, but the flavor is fantastic.  This is a perfect item to add to the feature board or menu to create some excitement.

Gulf Oysters

Make sure you are buying what you think you are buying.  Some people are selling a 30 pound box/sack of oysters and calling it 100 count.  Count them and you will see that there are not always 100 oysters in there, and they are not graded.  Contact your sales rep with questions.

Whole Salmon
We will be receiving North Sea whole salmon – Norwegian, Scottish, Faroe Island , for the weekend.

Trout 6 oz Natural Cut

We will start bringing in this product as a great lunch item for your menu or special board.  Is has a great presentation and good food cost.

Striped Bass

Beautiful farm-raised Texas striped bass is a perfect sustainable option for any menu!  The fish is kept below 38 degrees from the time it is harvested from the water to the time it hits your door.

East Coast Soft Shells

Soft-shell crabs will be here for the weekend.  We should have Jumbos and Whales.

Halibut

We have some really nice halibut with great prices. The season only lasts a little while, so get it while it lasts.

Redfish

Redfish production is tight again.  We are receiving as much as we can from the farm, but they are not able to harvest all we are ordering.  Drum is an excellent alternative.

Black Drum

Summer is here and drum prices are up.  The product is beautiful and still at a nice price, just a little more than before.

Tuna

We are seeing more tuna in the market, but prices are still on the high side.

Mahi Mahi

Mahi has tightened up this week.  Very little product available and prices are high.

Fresh Crabmeat

The season is upon us and availability is strong.

American Red Snapper

We are hoping to receive more for the weekend, but fishing is tight.
Steelhead
We will be receiving some steelhead for the weekend.

Marlin

No marlin available out of Miami.  We will check to see how Hawaii is doing.

Domestic Catfish

Catfish prices will drop next week.  Check out our prices if you are not currently using us.  Our catfish is farmed raised here in Texas.

Scallops

Scallop prices are steady right now.  Product looks great and tastes even better.

Scottish Salmon Fillets

Prices are steady and the product is excellent.

Mongchong, Opah, and Barracuda

Looking for something from Hawaii???  We have a great partner over there that supplies us with fantastic fish from the Hawaiian waters.

We offer 20-30 kg seabass as well as pre-cut fillets.  Get with your sales rep for details.

Trout projections look good on the green trout.  The Golden and Ruby tout are not growing out as fast as the green.  Product is tight.
