Redfish

Redfish or Red Drum is a delicious fish that we get farm raised where they use no hormones, no antibiotics and no mercury. They are bred and hatched on a family owned and operated inland farms located between Port O’Connor and Palacios, Texas. Fingerlings mature in earthen ponds filled with saltwater sourced from the Matagorda Bay system and saline aquifers. Water quality is monitored around the clock to maintain the healthy growing environment that produces a premium fish.

The most distinguishing mark on the red drum is one large black spot on the upper part of the tail base. Having multiple spots is not uncommon for this fish but having no spots is extremely rare. The color of red drum ranges from a deep blackish, coppery color to nearly silver. The most common color is reddish-bronze.

The meat is light and white with a mild taste, but not bland. It has a robust texture that adapts well to many cooking methods. Grill, steam, bake, pan sear or stir fry…it’s delightfully versatile. A 6 oz. serving contains 220 calories and no trans fat with 35 grams of protein and many beneficial nutrients including Omega 3 and 6 fatty acids, calcium, and iron.

The 2016 Live Crawfish is coming to an end. Most of south Louisiana has seen temperatures in the low to mid 90s. If you still need crawfish we offer a domestic whole cooked crawfish as well as our domestic crawfish tail meat.

Arctic Char is a unique strain of saltwater char sustainably farm-raised in Iceland. Often compared to salmon and trout, Arctic Char has a distinct, sweet buttery flavor and firm pink flesh that sets it apart from other fish on the market

We have a great selection of oysters this week. Make sure you are on our East Coast oyster list that we send out every week.

Gulf sack prices are holding steady with a good supply. We are also seeing a good supply of gallons with most of our oysters coming out of Texas.

The availability on jumbo sized redfish (2.5-3lb) continues to be limited   Extra Jumbo (3lb and up) are in decent supply and will be more available than the smaller sizes. Striped Bass is a great option this time of year as well.

Chilean Salmon prices are coming down nicely with good availability.  Canadian Salmon prices are holding steady. North Sea Salmon fillet prices are still up due to limited harvests from Norway.

Wild Salmon

Copper River Salmon prices have lowered with good availability. We have fish arriving direct from Alaska twice a week. Sockeye Salmon is also available from other areas in Alaska, such as Resurrection Bay, Barkly Sound, and Cook Inlet.

U10 Dry Scallop prices are starting to rise. We expect decent supplies for the coming weeks.

Tuna availability is looking good, with prices up a little. We will have great 2+ and #1 fish arriving this week.

We currently carry H&G 20-30 kg Chilean Seabass. Seabass prices are on the rise.  And we don’t see them coming down anytime soon.

Swordfish pricing is up and availability is tight this week.

The larger sizes of the Ruby Trout are more available than they have been.  For the next few months 8-10 oz and 10-12 oz  Ruby will be available, but limited.

The rainbow trout supply seems to be stable.  The variety of the cuts and sizes of this fish never cease to amaze me.  There are many options to meet your menu specifications.
