Bay of Fundy Canadian Salmon…

Taken from some of the most pristine waters in the world, Canadian salmon is praised everywhere for its freshness and taste.

Inner Bay of Fundy (iBoF) salmon are a very unique population of Atlantic salmon. Although they may look a lot like other Atlantic salmon, genetic studies show that they are quite different.

Like most Atlantic salmon, iBoF salmon begin their lives in freshwater rivers before heading out to feeding grounds in the ocean. However, once the iBoF salmon leave these rivers (the Point Wolfe and Upper Salmon Rivers in Fundy National Park of Canada), they do not participate in a long distance migration to the waters around Greenland. Instead, they spend a year of so feeding within the Bay of Fundy and the Gulf of Maine before returning to their home rivers to spawn.

This unique migration behavior, along with earlier maturity and higher survival rates between spawning periods, make iBoF salmon distinct from other Atlantic salmon populations.

Canadian salmon is not only healthy but also very safe to eat, thanks to one of the world’s most rigorous fish inspection and control systems, overseen by the Canadian Food Inspection Agency, which sets stringent standards for fish products, fish processing, and fish handling..

Copper River Salmon

We are seeing less fish on the market because of large chain adds.  We should be stocked up for your needs because of our wide range of vendors.

We have some very nice Mediterranean mussels in for the week.  They are a little different from the Canadian PEI, but the flavor is fantastic.  This is a perfect item to add to the feature board or menu to create some excitement.
We will be receiving some nice fish for the weekend.  Get in line now or you will miss the boat.
The public season has closed in Texas.  This means that only people with private leases will be able to harvest oysters in Texas. This also means the price on sacks has jumped up quite a bit.  We will be sourcing oysters from all over the Gulf to keep up with demand.  We will have product, and will continue to have product, for all our loyal customers.
Whole Salmon
We will be receiving North Sea whole salmon – Norwegian, Scottish, Faroe Island , whichever is better – and Canadian whole salmon.  Take your pick.
Trout 6 oz Natural Cut
We will start bringing in this product as a great lunch item for your menu or special board.  Is has a great presentation and good food cost.
Beautiful farm-raised Texas striped bass is a perfect sustainable option for any menu!  The fish is kept below 38 degrees from the time it is harvested from the water to the time it hits your door.

Soft shell whales will be here for the weekend. Jumbos are very tight and probably won’t make the grade.  We offer a variety of sizes in frozen as well.

We have some really nice halibut with great prices.  The season only lasts a little while, so get it while it lasts.

Redfish production has been better these past few weeks.  I hope things continue on this path.

This is a fantastic fish.  Great blackened, fried, baked, grilled, or any way you choose.  It is also great on the food cost!!!

We are seeing more tuna in the market, but prices are still on the high side.

We will be receiving a good shot of mahi this weekend.  Prices are better, but not where we want them to be for sure.

The season is upon us and availability is strong.

We’ll have a nice shot of reds in for the weekend.

Steelhead is a great feature for your menu.  It is affordable and can be used in a variety of cooking methods.

We are seeing some opportunities on 5-7 fresh catfish. Get with your sales rep for pricing.

Scallop prices are steady right now.  Product looks great and tastes even better.
