–Soft-Shell Crab

Soft-shell crabs are one of America’s favorite seafood delicacies. While all crabs shed their shells to grow, only a few species of crab can actually be eaten in this form. The blue crab is the only commercially available soft-shell product. The soft-shell is the blue crab in its molted state.
Timing is everything. Once molting starts, there are only a few hours before they begin growing another hard shell. To prevent this, they are caught just prior to losing their shells and closely monitored in holding tanks until the molting is complete. At that time they are whisked from the water and either frozen immediately, or packed in wet paper or straw and shipped live, via seafood purveyors, to restaurants and markets. All of this must happen quickly, as these crabs can only survive a few days out of water.

Live Crawfish June 1sttypically marks the beginning of the end for crawfish season and this year is no different. Several Louisiana crawfish farmers have pulled up their traps while others are taking their entire catch and using it as ‘seed stock’ for next season. This reduction in volume has led to price increases across the board. Once the rice field crawfish start to diminish the wild crop usually kicks in. Reports out of the Atchafalaya Basin are positive thus far as the fisherman are seeing optimal water levels for crawfish harvesting. Fruge Seafood will have crawfish for a few more weeks, so make sure to get them while you still can!

Artic Char is a unique strain of saltwater char sustainably farm-raised in Iceland. Murder Point Oysters Still waiting for Murder Points to come back in season. The recent tropical storm didn’t help either.  We continue to get weekly updates and will let you know once they are available.
Murder Point Oysters are out of Porterville Bay in Alabama near what was once called Myrtle Point. Oysters are limited right now due to all the fresh water run-off  from all the storms in the past few weeks. We hope to have more next week.

Redfish & Striped Bass Extra Jumbo Redfish (3lb and up) have a good availability right now. Jumbo Redfish (2.5-3 lb.) availability is starting to not be as plentiful. Striped Bass is a great option this time of year as well.

Farmed SalmonChilean Salmon Prices are holding steady. Canadian prices are stabilizing. North Sea Salmon pricing is still up.

Wild Isles All Natural Salmon This salmon is naturally raised; Antibiotic Free, Chemical Free, Preservative Free, and Hormone Free. The feed is comprised of all natural and sustainable resources. And unlike other farm raised salmon Wild Isle Salmon is raised in the open ocean of the Shetland Islands, and not in a Loch or Bay like other farms raised salmons.

Scallops U10 Dry Scallop prices are starting to move up for the winter. We expect decent supplies for the coming weeks.

 

Tuna availability is looking good with prices on the rise.  We will have a good amount of 2+ and #1 fish for the weekend.

Black Drum out of Hackberry, LA, is still not experiencing a decrease in availability.  Catch is still down, however much better than the past few weeks. We hope to have more product arrive for the weekend.

 

Seabass We currently carry H&G 20-30 KG Chilean Seabass. Seabass prices are holding steady.

 

Rainbow ‘Green’ and Ruby Trout Rainbow trout farms are experiencing slow growth, which is causing farms to run short.  Ruby Trout is a wonderful substitute during this time. Get with your sales rep for pricing and availability.
