Hebi spearfish is commonly known as a shortbill spearfish. Found in Hawaiian waters, its dorsal fin is shorter than that of other billfish. They are commonly caught between 20 and 40 pounds on a line with set hooks. Its flesh is white to pink in color and is mild in flavor (still a little stronger than ahi). Hebi is a perfect fish for your “catch of the day” menu and is delicious grilled, broiled, sautéed, or raw (poke). Hawaii spearfish is an excellent source of healthy, extra lean protein. It is also low in saturated fat and low in sodium. It is rich in niacin, vitamin B12, phosphorus, and selenium. Hebi is also a good source of vitamin B6 and provides 350mg of omega-3’s per 4 oz. serving of fresh fish.

Supplies are still tight. Catch is down. Warmer weather this week should lead to better results next week.
Quality oysters continue to be tight. We have some great relationships to keep us in oysters as much as possible. We will be short only when mother nature is short.
We are offering beautiful Jonah all leg crabmeat. This meat is from the east coast and has a sweet flavor. This is a great item for the feature board. We also have scored Jonah crab claws. This is sold by pre-order only.
We have some great ARS in fresh from the Gulf.
Looks like U/10 dry scallops are going to be tight for the next two years. The quotes are shrinking, and the product projections are not looking good. Prices have already begun to rise.
Tuna prices still high, but quality is very nice.
Prices are up a little bit. Ecuador is a little short on fish, so demand is up.
We’ve got Chilean 3-5, Bay of Fundy, and North Sea fillets.
We have some nice 400-600 gram whole fish. This is great for serving whole, or we can cut it into fillets for you.
We also have a nice variety on our east coast oyster availability list; get with your sales rep if you’d like to receive that list via email.
We have a bit of swordfish coming in for the weekend.
Grouper should be getting easier to find now that Mexico is off conservation. We have some nice fish coming in directly from Costa Rica.
We have nice North Sea salmon available all week.
Our farmed striped bass is from right here in Texas. It is harvested, transported, prepared, and shipped under controlled temps. This increases the quality and shelf life for you.
We will have some nice drum for the week. This fish is very affordable and great in any application.
Domestic crab meat is hit or miss right now. We should see some in April.
Prices are holding steady for now. Quality is great.

Green trout is what the guys on the farm call the regular rainbow trout. Since they have ruby and golden as well, it is just a term they use to distinguish between the three. Our ‘green’ trout is what every sales person calls rainbow trout. Red and golden continue to be very tight. The end is not in sight yet.
