Chilean Seabass

Chilean Seabass

Seabass is a large fish that can weigh up to 100 pounds and has an elongated, scaly body with two distinct lateral lines. Cooked meat is snow white. Seabass has a mild, rich and buttery flavor with texture that is moist and tender due to its high oil content with a large firm flake. Available in H&G, fillet, and portions.

Notes from our buyer

Production levels continue to look good. Prices are up a little this week.  We expect to see graded sizes available after the Easter holiday.

Halibut

East Coast Halibut availability is looking good with prices coming down.  We have new product arriving this week.  Alaskan Halibut Season started and we will have product available starting next week.

Mahi prices are back on the rise with limited availability.

New fish just in from Galveston, TX. Whole fish ranging in size from 1-2, 2-4, and 4-8.

We have Fresh Crabmeat out of Mexico & Venezuela this week, which is available with good prices. Fresh Crab fingers are limited; they have been too small pack.  Call your sales rep today to place an order.

Currently Littleneck Clams and Mussels are in good supply. Razor clams will be available for pre-orders starting next week.

Availability is looking good this week. We have shipments arriving twice a week.

Gulf sack prices are holding steady with a good supply. We are also seeing a good supply of gallons with most of our oysters coming out of Texas.

The availability on jumbo sized redfish (2.5-3lb) continues to be limited   Extra Jumbo (3lb and up) are in decent supply and will be more available than the smaller sizes. Striped Bass is a great option this time of year as well.

Chilean Salmon prices have increased this week. North Sea Salmon and Canadian Salmon fillet pricing is following the same trend. This is due to limited salmon in the market due to the Chilean Salmon shortage.

U10 Dry Scallop prices are holding steady. We expect decent supplies for the coming weeks.

Tuna availability is looking very good, with prices holding steady. We will have great 2+ and #1 fish arriving this week.

Bad weather and high winds has limited the catch out of Hackberry, LA. We hope to have new shipments arriving this week.

We have a variety of seabass sizing options.  We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are continuing to move up.

Swordfish availability has improved and prices are looking good. We have new product arriving from Costa Rica for the weekend.

The larger sizes of the Ruby Trout are more available than they have been.  For the next few months 8-10 oz and 10-12 oz  Ruby will be available, but limited.
The rainbow trout supply seems to be stable.  The variety of the cuts and sizes of this fish never cease to amaze me.  There are many options to meet your menu specifications.

The All Natural Ocean Trout (Steelhead) is an amazing sashimi quality ocean trout with a higher fat content then salmon and a great flavor that lends itself to any type of cooking or smoking.
