Cobia

Cobia has been said to be one of the best tasting fish in the sea—prefered over snapper, grouper, scamp and pompano. Known also as lemonfish beause they have a faint taste of lemon. Dark brown with a single dorsal fin, the cobia is often mistaken for a shark. Raw cobia meat is light tan, but cooked, it turns snowy white. It has a sweet, rich flavor which is firm with a nice flake. The oil content is similar to that of coho salmon.Cobia is low in calories and high in protein. The firm, moist flesh lends itself well to grilling and takes well to marinades and bold sauces. Fried, grilled, broiled, or sautéed, this fish is an excellent menu choice.

Icelandic Cod 
Availability is looking good this week. With have shipments arriving twice a week.

Arctic Char is a unique strain of saltwater char sustainably farm-raised in Iceland. Often compared to salmon and trout, Arctic Char has a distinct, sweet buttery flavor and firm pink flesh that sets it apart from other fish on the market.

Gulf sack prices are holding steady with a good supply. We are also seeing a good supply of gallons with most of our oysters coming out of Texas.

The availability on jumbo sized redfish (2.5-3lb) continues to be limited   Extra Jumbo (3lb and up) are in decent supply and will be more available than the smaller sizes. Striped Bass is a great option this time of year as well.

Chilean Salmon prices are up this week. North Sea salmon prices are remain higher with availability still tight in the market.

Tuna availability is looking very good, with prices holding steady. We will have great 2+ and #1 fish arriving this week.

Bad storms in Hackberry, LA, have limited the drum catch this week.  Fish will be extremely limited.  Hope to have more fish arrive over the weekend, after the storms pass

We have a variety of seabass sizing options.  We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are continuing to move up

Swordfish availability has been limited with prices up. We have new product arriving from Costa Rica for the weekend.

The larger sizes of the Ruby Trout are more available than they have been.  For the next few months 8-10 oz and 10-12 oz  Ruby will be available, but limited.

The rainbow trout supply seems to be stable.  The variety of the cuts and sizes of this fish never cease to amaze me.  There are many options to meet your menu specifications.
