–Soft-shell crabs are one of America’s favorite seafood delicacies. While all crabs shed their shells to grow, only a few species of crab can actually be eaten in this form. The blue crab is the only commercially available soft-shell product. The soft-shell is the blue crab in its molted state.

Timing is everything. Once molting starts, there are only a few hours before they begin growing another hard shell. To prevent this, they are caught just prior to losing their shells and closely monitored in holding tanks until the molting is complete. At that time they are whisked from the water and either frozen immediately, or packed in wet paper or straw and shipped live, via seafood purveyors, to restaurants and markets. All of this must happen quickly, as these crabs can only survive a few days out of water.
Once molting is complete, most of the crab is edible. They are succulent and juicy.

Crawfish

The overall crawfish supply is steady as we move into May. The size of this year’s crop has started to fall off as their food supply has been consumed earlier in the season. We are offering our Quality Grade crawfish moving forward. These are a mix grade of crawfish free of mud, turtles, and rice stalks.

Soft Shells Crabs are available in Live, Dressed, and Frozen. Get with your sales rep for pricing and availability.

 

Halibut

Alaskan Halibut availability and pricing is looking good this week. There are more landings coming in and we have more shipments arriving in time for the weekend.

 

Mahi

Mahi has prices are down with good availability. Call your sales rep for pricing and availability.

 

American Red Snapper
New fish just in from Galveston, TX. Whole fish ranging in size from 1-2, 2-4, and 4-8 are available with good availability

 

Fresh Crabmeat
We have Fresh Domestic Crabmeat and Fresh Non Domestic Crab from Mexico & Venezuela. Both have good availability and pricing. Call your sales rep today.

 

Clams & Mussels

We have a good amount of Pei Mussels and littleneck Clams.

 

Icelandic Cod 

Prices and availability are looking good this week. Call your sales rep for pricing and availability.

 

Artic Char

Arctic Char is a unique strain of saltwater char sustainably farm-raised in Iceland. Often compared to salmon and trout, Arctic Char has a distinct, sweet buttery flavor and firm pink flesh that sets it apart from other fish on the market. We get this in twice a week; ask your sales rep for more info.

East Coast Oysters
We have a great selection of oysters this week. Make sure you are on our East Coast oyster list that we send out every week. We have access to several varieties each week.

 

Gulf Oysters

We are starting to see some areas close in Texas. We expect availability to tighten up the closer we get to summer. So far Gulf sack prices are holding steady.

 

Redfish & Striped Bass
Extra Jumbo Redfish (3lb and up) have a good availability right now. Jumbo Redfish (2.5-3 lb.) are harder to get due to the warmer weather. Striped Bass is a great option this time of year as well.
 

Salmon
Prices and availability are looking good on all farmed salmon; North Sea, Canadian, and Chilean. We are starting to see Wild Alaskan Troll King Salmon available in the market. Copper River Salmon season will open on May 15th.

 

Wild Isles Organic Salmon 

This E.U Certified Organic salmon is unlike any other farm raised salmon where it is raised in the open ocean of the Shetland Islands, and not in a Loch or Bay like other farms raised salmons. Its certified sustainable aquaculture methods are free from all antibiotics, hormones, & GMO, and its feed is certified organic and uses no synthetic coloring or pigments added.

Scallops
U10 Dry Scallop prices are holding steady. We expect decent supplies for the coming weeks.

 

Tuna
Prices are still up with decent availability. We will have great 2+ and #1 fish arriving this week.

 

Grouper
Red, black, and yellow edge grouper are available in the market, although limited. Call your sales rep for prices and availability.

 

Black Drum
Good fishing weather out of Hackberry, LA has got us some good landings on drum this week. Call your sales rep for pricing and availability.

 

Seabass
We currently carry H&G 10-15 kg & H&G 20-30 KG Chilean Seabass. Seabass prices are on the rise. And we don’t see them coming down anytime soon.

 

Swordfish
Swordfish availability is looking good, with prices coming down. We have beautiful fish out of Costa Rica.

 

Rainbow ‘Green’ and Ruby Trout

The larger sizes of the Ruby Trout are more available than they have been. For the next few months 8-10 oz and 10-12 oz Ruby will be available, but limited.

Wild Isles Ocean Trout

The All Natural Ocean Trout (Steelhead) is an amazing sashimi quality ocean trout with a higher fat content then salmon and a great flavor that lends itself to any type of cooking or smoking.
