-Wahoo
Ono, another name for Wahoo, means “sweet, very good to eat” in Hawaiian. Built like a torpedo, they are fast swimmers. A Wahoo is a close relative to the King Mackerel. Ono feed near the surface in 30 to 50 fathoms along coastal ledges and are occasionally caught in open deep water. The vast majority of Ono are caught in Hawaiian waters by trollers.
This well-known Pacific fish is deliciously cooked in a variety of ways. The fillets of the Wahoo are white and firm with a flaky and delicate texture. It’s flavor is mild. Wahoo is delicious saut’ed, baked, broiled or fried. Hawaii Wahoo is an excellent source of healthy, extra lean protein. It is also low in saturated fat and low in sodium.

The result is an amazing sashimi quality ocean trout with a higher fat content then salmon and a great flavor that lends itself to any type of cooking or smoking. This sustainably raised ocean trout is a more sustainable and lower costing than a similar Tasmanian Ocean Trout.
Anglesey Aquaculture Mediterranean Sea Bass (Bronzino) – Unlike any other Mediterranean sea bass, this is truly sustainable. Welsh sea bass is raised in a ZERO WASTE land based recirculation farm in Wales, UK. From egg to harvest every detail of its life cycle is cared for and highly monitored to produce the best tasting sea bass using no antibiotics, hormones, and feed free from all GMO’s. This product is a Hawaiian favorite with a great price point. Opah flesh has a light-pink to orange color, but turns white when cooked.

Tilefish
Golden tilefish is low in fat and has a delicate, sweet flavor similar to lobster or crab. Tilefish is primarily sold fresh whole, though it is also sold fresh in fillets and steaks. The larger tilefish have a firmer flesh and a longer shelf-life.

Mahi
Mahi is coming in by the boat load. This product is in a great price point and is beautiful, direct from Costa Rica. If it’s not already on your menu or specials board, it’s definitely time to take a look.

Tuna prices are down this week, but #1 tuna is extremely tight and remains expensive
