Filet of Rockfish

___

Rockfish

Rockfish is a fin fish from the Pacific. It is an important year-round source of ground fish and includes dozens of related species. Rockfish is sweet with a mild flavor. It’s great for any menu because it is available year-round.

Rockfish that are familiar to consumers include snapper, Pacific snapper, rockfish, rock cod and black bass. Nearly 70 species of rockfish can be found along the west coast of North America, with some growing up to 40 pounds. While there are taste differences in several varieties, all rockfish are firm, lean, mild-flavored fish. The main difference between varieties is texture.

Rainbow ‘Green’, Golden, and Ruby trout

Green trout is what the guys on the farm call the regular rainbow trout.  Since they have ruby and golden as well, it is just a term they use to distinguish between the three.  Our ‘green’ trout is what every sales person calls rainbow trout.  Red and golden continue to be very tight.  The end is not in sight yet.
