Gulf Oysters

People love to eat oysters, and Gulf oysters are particularly a favorite. Whether you eat them in moderation or by the dozen, mollusks provide a low calorie protein that are an excellent source of zinc, vitamin B-12, and omega-3 fatty acids. Oysters grow like weeds down in the Gulf. They are still natural-set and still wild. The lower salinity levels of the Gulf have protected wild oysters from certain diseases in a way that hasn’t happened in the Chesapeake. A must for every menu.

Notes from our buyer

Tuna

Tuna prices are still high.  The catches are still low, and the boats are demanding the high prices.  The old days of some areas being cheaper seem to be gone.  With the technology we have today, everyone knows the prices around the world.

Mahi Mahi

Prices are up a little bit.  Ecuador and Panama are catching, and Costa Rica should be coming on soon.   Their season usually begins this month.

Stone Crab Claws

Stone crab claws are looking beautiful.   Get them while the season lasts.

Gulf Oysters

Oysters are looking great and are abundant.  It’s time to run some happy hour specials.

Salmon fillets

We offer Bay of Fundy, North Sea, and Chilean salmon fillets.  All are beautiful, so take your pick.

East Coast Oysters

We have some nice Lucky Lime, Pickle Point, Raspberry Point, and Plymouth Rock oysters, all from the east coast.  We have a promotion going on the Raspberry Point oysters – order two cases, get a beautiful Raspberry Point hat!!!

Swordfish

We will have some nice swordfish for the weekend.

Grouper

The Grouper is looking amazing.  Great blackened or grilled.

We will be receiving North Sea whole salmon – Norwegian, Scottish, and Faroe Island – for the weekend.

Striped Bass

Our farmed striped bass is from right here in Texas.  It is harvested, transported, prepared, and shipped under controlled temps.  This increases the quality and shelf life for you.

Halibut

Fresh halibut is pretty much done for the season.  We are looking into a refreshed program.  Please get with your sales rep if you are interested.

Redfish

Production is back to normal, and I hope it lasts.

Black Drum

We will have some nice drum for the week. This fish is very affordable and great in any application.

Fresh Crabmeat

Domestic crabmeat will be hit or miss for now until next year.  We are moving to our non-domestic fresh crabmeat.  Get with your sales rep for info and pricing.

Lane Snapper

Lane Snappers have tightened up.  We should have some next week.

Domestic Catfish

Prices are holding steady for now.  Quality is great.

Scallops

Pricing is steady and quality is great.

Mongchong, Opah, and Barracuda

Looking for something from Hawaii???  We have a great partner over there that supplies us with fantastic fish from the Hawaiian waters.

Rainbow ‘Green’, Golden, and Ruby trout

Green trout is what the guys on the farm call the regular rainbow trout.  Since they have ruby and golden as well, it is just a term they use to distinguish between the three.  Our ‘green’ trout is what every sales person calls rainbow trout.  Red and golden continue to be very tight.  The end is not in sight yet.
