Shortbill Spearfish (Hebi)
Shortbill spearfish are commonly known as Hebi in Hawaii. Its dorsal fin is shorter than that of other billfish species, and its bill is very short in comparison. Hebi caught in Hawaiian waters are usually between 20 and 40 pounds in weight.
Hebi has white to pink colored flesh that is somewhat softer than that of Nairagi or Kajiki. Its flavor is mild (although more pronounced than ahi). It is one of several species of billfish, which are suitable for grilled or broiled “catch of the day” menu items in restaurants.
Hawaii Spearfish is an excellent source of healthy, extra lean protein. It is also low in saturated fat and low in sodium. It is rich in niacin, vitamin B12, phosphorus and selenium. Hawaii Spearfish is a good source of vitamin B6 and iodine. Hawaii Spearfish also provides about 350 mg of omega-3’s (DHA and EPA) per 4 ounce serving of fresh fish.

Notes from our buyer
Wild Salmon season has come to an end. Winter Troll caught Kings will be available through the winter months. They are caught on a quota system, with the season ending in mid April. Availability will be sporadic with prices high.

Alaska Halibut season ends November 6th. We have a small shipment of Halibut arriving this week.

We were able to get fish from Galveston this week. Whole fish ranging in size from 1-2, 2-4, and 4-8.

We have a great shipment of fresh Domestic Crabmeat this week with good availability. Prices have come down, and we are getting in twice a week from Louisiana. We have a nice variety of oysters this week from the East Coast. There are a few closures in Maine due to rain this week. Make sure you are on our East Coast oyster list that we send out every week.

The Gulf season opened on November 1st. Due to red tide and heavy rainfall, everything south of Galveston Bay is closed. In Galveston, only 3 areas are open. We are closely monitoring the situation, and will update as soon as the TSHS (TX State Health Services) gives the green light. Oysters are still available out of Louisiana, and Mississippi.

The availability on jumbo sized redfish (2.5-3lb) is starting to decline. Extra Jumbo (3lb and up) are in decent supply and will be more available than the smaller sizes. Striped Bass is a great option this time of year as well.

Chilean Salmon prices are continuing to stay down, with all sizes readily available. North Sea salmon prices are holding steady, with good availability.

We have a variety of seabass sizing options. We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are continuing to move up.

Swordfish is continuing to run good this week with prices a little higher, but still looking very good.

Ever tried it? This is a great fish that is perfect for grilling or baking. The ferocious-looking wolfish gets its name from the sharp, protruding teeth it uses to feast on lobsters, clams and other shellfish. Found from southern New England to Greenland and the Barents Sea, the bottom dwelling cold water creature is primarily a bycatch of trawl fisheries targeting cod, haddock and other ground fish. Iceland, which has a direct fishery for the species, is the largest producer.

The larger sizes of the Ruby Trout are more available than they have been. For the next few months 8-10 oz and 10-12 oz Ruby will be available, but limited.
The rainbow trout supply seems to be stable. The variety of the cuts and sizes of this fish never cease to amaze me. There are many options to meet your menu specifications.

The All Natural Ocean Trout (Steelhead) is an amazing sashimi quality ocean trout with a higher fat content then salmon and a great flavor that lends itself to any type of cooking or smoking.
