opah

-Opah

Opah have large disc shaped bodies with blue and a deep red-orange upper body fading to a rosy color on the belly, with white spots covering the sides and bright redish-orange fins.  Opah can weigh 150 pounds.

 

Fresh Opah, also called Moonfish, has translucent pinkish flesh and beautiful multi-colored skin. The tender top loin of Opah is a light salmon-orange or pink-rose color and is often used for sashimi. The flavor of the top loin is sweet & lean with a texture somewhat like tuna.

 

The side and lower flesh of Opah is the same light salmon-orange color at the top but fades to a paler color at the bottom and is too fibrous to be used for sashimi but still becomes very tender after cooking.  With a robust flavor similar to tuna or swordfish, the lower loin is higher in natural oil than the top loin and has a fat content which can be higher than Salmon.

The cheek meat is dark red.  And the breastplate flesh is bright red.  All the flesh turns white after cooking except for the breastplate which turns brown.

This sustainably raised ocean trout is a more sustainable and lower costing than a similar Tasmanian Ocean Trout.

Anglesey Aquaculture Mediterranean Sea Bass (Bronzino) – Unlike any other Mediterranean sea bass, this is truly sustainable. Welsh sea bass is raised in a ZERO WASTE land based recirculation farm in Wales, UK. Hebi

This product is just past its peak landing period, but it still a great price option.  It’s most suitable for a grilled or broiled “catch of the day” menu.

Domestic Amberjack from the Atlantic Ocean is a great addition for your specials board this week.

Clams Mussels

These fresh shellfish options are a great addition to any menu.  A clam chowder or steamed mussels with pasta are great options as the weather starts to cool a little.

Flounder

East coast flounder is in full swing.  The product is available in 1-2, 2-4, and 4-6 lb fish and this delicate fresh fillet will certainly stand out on your menu.

We have Coho direct from Alaska.  There are troll Kings available, but this product is really expensive so we will only bring in what you ask for.  Get with your Fruge rep to order your product today!

The storms over the weekend affected availability on Rocky Nook, Wallace Bay, & Sunken Meadow. Marionports, Standish, Osterville, Onset, Katama, Wellfleet, Thatch Island, etc. are all great options.  Make sure you are signed up for our East Coast Oyster list for availability and prices.

Redfish & Striped Bass
This product is grown right here in Texas, which gives you the freshest fish possible.  We order this product straight from the farm, so keep us informed if your usages change, so we can be sure to keep you supplied with the freshest product.  This Jumbo Redfish is very limited right now, but we have plenty of X-Jumbo to fill your redfish needs.  Please be sure to let your sales rep know if portions are an option.  Let us cut to your specifications so you don’t miss out on this fantastic product.

Salmon
Chilean salmon prices are stable and this should continue a little longer.  Make sure to maximize your usage while the price is low.  We also stock North Sea and Canadian product in whole and fillet form.  Check with your sales rep for case discounts if you are a volume user

Gulf Oysters 
The new season opened in Texas November 1.  Expect a fatter oyster and price decreases shortly.

Snapper
American Red prices are up again.  We have Lane Snapper if your menu is price sensitive.  Call your sales rep for all information

Halibut 
We have beautiful 10/20 and 20/40 Halibut direct from Alaska.  The season is expected to close mid-November or sooner if the quotas are met.  Make sure you are selling the fresh product while it is available.

Scallops 
Scallop prices are slightly up as is normal this time of year. We are exploring every option to get the best price and best quality product.  Please give us feedback on the new beautiful product we are buying straight from the boats.

Tuna 
Tuna prices are still up this week, but should start falling at the end of the week. We do have both #1 and #2+ grade product and are expecting more daily.

Grouper 
The grouper supply is tight and the prices are up.  Let your sales rep know if you are interested in this product.  The grouper supply will continue to be tight as the boats are fishing for octopus

Black Drum
Black drum availability is good this week.  This product sells fast! Don’t miss out; get with your sales rep for an order

Fresh Crabmeat 
Domestic Crabmeat prices are up, but we do have a steady supply of MSC product. Call your sales rep today to place an order

We have a variety of seabass options.  We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are moving up and that trend will continue through the holidays
