Domestic Swordfish

Found in the waters of Eastern United States, domestic swordfish is an excellent source of lean protein. Swordfish flesh may vary from pale to pinkish, probably depending on diet prior to capture. In either case, good quality is indicated by red blood lines bordering the loin or fillet. Its flavor is mild, with a firm texture. Swordfish is most commonly prepared by marinating, grilling, baking, pan-frying, smoking the pieces, or using on kebabs. It’s a personal favorite to many and a must for all menus.

Tuna
Tuna continues to be very tight and expensive.  One of the reasons is the early warm temperatures.  Tuna move where their ‘feed’ moves.  Since fishermen are creatures of habit, they usually fish their usual spots, but the fish are not there.  Another reason is that the ‘net boats,’ the boats that catch fish for canning, catch over 75% of the world’s tuna supply.  They catch any size fish as well.  So the young fish that have not had time to mature and reproduce are being caught and processed.  In Costa Rica, the area where the fish are eating, they are catching swordfish.  The tunas are not eating right now.  We are all hoping that this will change over the next moon cycle.  The hurricanes in the Gulf have caused us to miss one moon cycle, possibly two.  We are hoping things get back closer to normal when the waters begin to get colder.

Hog Snapper
This is a great fish for your feature board.  Spear caught, this fish has a firm flesh, great for any cooking application.  Check out our website for further information.

Gulf Oysters
We should see a steady supply of Gulf oysters for a while.  The Texas season opens November 1st, so we should see some nice product and some price relief on sacks moving forward.

We are getting in some great new oysters such as Lucky Lime oysters and Plymouth Rock oysters.  Please get with your sales person for details and pre-orders.

Striped Bass

Our farmed striped bass is from right here in Texas.  It is harvested, transported, prepared, and shipped under controlled temps.  This increases the quality and shelf life for you.

Halibut

We have some beautiful halibut in.  Keep it on the special board; it won’t be around forever.

Redfish

Production has slowed down again.  Looking like only extra-jumbo redfish for a while with tight supply.

Black Drum

We will have some nice drum for the week from Hackberry, Louisiana.

Mahi Mahi

We are seeing a little more mahi in the market.  I hope this marks the beginning of the new season.  Prices are not great but are much better than the past few months.

Fresh Crabmeat

Fresh domestic crab meat is tightening up a little.  As the summer ends, it becomes more difficult to get what we want.
Steelhead
Steelhead will be in for the weekend.

Domestic Catfish

Prices are nice and production is good on 5-7 sizes and up.

Pricing is steady and quality is great.

Rainbow ‘Green’, Golden, and Ruby trout

Green trout is what the guys on the farm call the regular rainbow trout.  Since they have ruby and golden as well, it is just a term they use to distinguish between the three.  Our ‘green’ trout is what every sales person calls rainbow trout.  Red and golden continue to be very tight.  The end is not in sight yet.
