Scottish Salmon fillets…

Salmon is in high demand. Consumption has been strongly driven by the attraction of fish as a convenient and enjoyable, highly nutritious food and by the widely recognised health benefits of the omega-3 fatty acids found in oil-rich fish, such as salmon.

Scottish salmon is a delicious and highly nutritious food containing protein, vitamins, trace elements and minerals, all vital ingredients for a healthy, balanced diet. The salmon industry has strived to produce high quality food, available to everyone, while respecting the environment on which it depends.

 

Head chefs and restaurant managers from throughout the Metroplex received valuable product information and amazing food samples at Frugé Seafood’s 1st Annual “School of Fish” Monday, October 3rd.

All attendees got to meet with four of  Frugé Seafood’s vendors to gain specific insights about harvesting, grading and availability for oysters, tuna, scallops and farm-raised redfish and hybrid striped bass in an information-packed presentation at the Milestone Culinary Arts Center.

Notes From Our Buyer

Gulf Oysters

As you may have already heard, Gulf oyster sack production is zero in Texas.  There was an algae bloom, aka “Red Tide” that occurred west of Galveston Bay.  The tide moves west, so the oyster beds our partners use were not affected.  However, the Texas Health Department closed the beds anyway.  We need rain and high winds to move this algae bloom out.  Until then, we are working on getting oysters sacks from Louisiana through our partner in Texas.  Most of the oysters coming in are green tagged, which means that they have to be shucked or post harvest treated.  However, we hope to get some oysters that are not green tagged for the weekend.  Shucked oyster gallon production will not be affected.Redfish – Our redfish is farm-raised right here in Texas and is another great sustainable option for the menu.  Everyone knows its name, and it is very easy to sell.  It cooks up great any way!
Domestic Catfish
Production on the larger sizes are getting harder to find.  9-11 catfish fillets will be in short supply for a while.  I don’t know how long, but it would be great if you could move to a 5-7 or 3-5.
Scallops
Scallops prices have come down a bit.  Hopefully this will last for a while.  This time of year prices will change more often than in a few months.
Cobia
If you are looking for some great farmed Cobia, please let us know so we can get it in for you.  Remember, we don’t bring it in unless you tell us.
Mahi Mahi
It looks like November is the month for the Costa Rican mahi season to start.  Product is available now, but prices are still up there.
Scottish Salmon fillets
We have beautiful 3-5 Scottish salmon fillets that will knock your socks off.  Prices are great, and quality is outstanding.  Get with your sales rep for details.
Halibut
Halibut is still looking great. Prices are high but well worth it.
Yellowfin Tuna
Tuna is very tight right now.  Prices are high but the quality is great.
Striped Bass
Beautiful farm-raised Texas striped bass is a perfect sustainable option for any menu!  The fish is kept below 38 degrees from the time it is harvested from the water to the time it hits your door.
Mongchong, Opah, and Barracuda
Looking for something from Hawaii???  We have a great partner over there that supplies us with fantastic fish from the Hawaiian waters.
Domestic Crab Meat
Prices are up a little from last week.  We are hoping to see more production
Seabass
We have some beautiful 20-30 Kb Seabass in the building.  Butcher it yourself or let us do the work.
East Coast Oysters
Fruge has a wide variety of East Coast oysters available.  We send out an availability list each week of what we have to offer.  If you are not yet receiving this list, please get with your sales person and they will gladly add you to the email list.
Cod, Sole, and Haddock
These East Coast treats are a great change to your feature board!  With the movement of business travelers and transplants from all over, you don’t want to miss out on some great valued fish to add to your menu or feature board.  We only bring in what you want, so get your pre-orders in now.
Live Lobsters
We offer a full range of sizes of live lobsters straight from Maine and Canada.  Order today, and we will get them to you tomorrow.
Swordfish
Swordfish prices will be moving up next week from what I am hearing.  Get the good prices while they last.
Green, Golden, and Ruby trout
Trout is very tight right now.  All the major farms have to let their stock grow out.  Relief will be here hopefully in late October.
Atlantic salmon
Salmon prices are steady this week.  We hope to see them drop in the next little bit.
Grouper
We have nice 3-5 pound red grouper in the warehouse.  Grouper is great for a bar sandwich or a center of the plate entrée.
Tilapia
Fresh and frozen tilapia have both seen price increases.  The increase on the fresh is due to higher feed and fuel costs.  The frozen is a combination of higher costs and flooding in Indonesia and China, where the majority of frozen tilapia is produced.
Black Drum
This is a fantastic fish.  Great blackened, fried, baked, grilled, or any way you choose.  It is also great on the food cost!!!
