Opah Fillets

Opah have large disc shaped bodies with blue and a deep red-orange upper body fading to a rosy color on the belly, with white spots covering the sides and bright redish-orange fins.  Opah can weigh 150 pounds.

 

Fresh Opah, also called Moonfish, has translucent pinkish flesh and beautiful multi-colored skin. The tender top loin of Opah is a light salmon-orange or pink-rose color and is often used for sashimi. The flavor of the top loin is sweet & lean with a texture somewhat like tuna.

 

The side and lower flesh of Opah is the same light salmon-orange color at the top but fades to a paler color at the bottom and is too fibrous to be used for sashimi but still becomes very tender after cooking.  With a robust flavor similar to tuna or swordfish, the lower loin is higher in natural oil than the top loin and has a fat content which can be higher than Salmon.

 

The cheek meat is dark red.  And the breastplate flesh is bright red.  All the flesh turns white after cooking except for the breastplate which turns brown.

Wild Salmon
We have Wild Coho salmon arriving this week.  Season is starting to wrap up.  Hope to have for another week

Halibut
Alaska Halibut season will continue until the official cut of date of November 6th, unless quota has been met before then.  We have new shipments of Halibut arriving this week.

American Red Snapper 
We were able to get fish from Galveston this week. Whole fish ranging in size from 1-2, 2-4, and 4-8.  .

Golden Tile from the Gulf is available.  A very lean fish and perfect for the most select menus.

Fresh Crabmeat
We have a great shipment of fresh Domestic Crabmeat this week. Prices have come down, and we are getting in twice a week from Louisiana. Call your sales rep today to place an order.

Littleneck Clams and Mussels are available.  Currently all the extra rain that the East Coast has been getting, has not affected availability.

Arctic Charr is a unique strain of saltwater charr sustainably farm-raised in Iceland. Often compared to salmon and trout, Arctic Charr has a distinct, sweet buttery flavor and firm pink flesh that sets it apart from other fish on the market. .

East Coast Oysters 
We have a nice variety of oysters this week from the East Coast. Make sure you are on our East Coast oyster list that we send out every week.

Gulf Oysters 
Gold Band Oysters are limited for the next few weeks. Parts of Mississippi and Louisiana will open on October 19th, and Texas will open on November 1st.  Gulf sacks and gallons are available. This week we have standard gallons, select gallons and oyster jars.

Redfish & Striped Bass 
The availability on jumbo sized redfish (2.5-3lb) is starting to decline.  Extra Jumbo (3lb and up) are in decent supply and will be more available than the smaller sizes. Striped Bass is a great option this time of year as well.

Chilean Salmon prices are coming down, with all sizes readily available.  North Sea salmon prices are holding steady, with good availability.

Scallops 
Scallop prices are holding steady this week. We expect decent supplies for the coming weeks. I have heard that scallop prices will start to creep up in October.

Tuna 

Tuna production is looking good with prices holding steady.  We will have great 2+ and #1 fish arriving this week.

We have grouper fillet available this week from Mexico.  We can also get Yellowedge Grouper from the Gulf upon request.

Black Drum

Black Drum out of  Hackberry, LA, is available this week. Great blackened, fried, baked, grilled, or any way you choose. Get with your sales rep for an order, this fish sells fast!

Seabass 
We have a variety of seabass sizing options.  We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are continuing to move up.

Crawfish
Crawfish season has ended.  We have Frozen Cooked Crawfish for your whole crawfish needs.

Swordfish is continuing to run good this week with prices still looking very good.

Wolfish
Ever tried it? This is a great fish that is perfect for grilling or baking. The ferocious-looking wolfish gets its name from the sharp, protruding teeth it uses to feast on lobsters, clams and other shellfish.  Found from southern New England to Greenland and the Barents Sea, the bottom dwelling cold water creature is primarily a bycatch of trawl fisheries targeting cod, haddock and other ground fish. Iceland, which has a direct fishery for the species, is the largest producer

Rainbow ‘Green’™ and Ruby Trout 

The larger sizes of the Ruby Trout are getting harder to get.  The fish are not growing as fast as we would like. For the next month 8-10 oz and 10-12 oz  Ruby will not be available.The rainbow trout supply seems to be stable.  The variety of the cuts and sizes of this fish never cease to amaze me.  There are many options to meet your menu specifications.
