Arctic char

Arctic Char

Arctic Char is a cold-water fish. It is closely related to both salmon and lake trout with many of the same characteristics of both. Arctic Char vary in color depending on the time of year and the environment in which it lives. The flesh can range from bright red to pale pink. Commercial Arctic char typically weigh between 2 and 10 lb. The flesh is fine flaked and medium firm. Buyers consider Artic char a good substitute for farm-raised salmon because it has a more delicate texture and clean, mild flavor.
