Wahoo
Wahoo, which means “sweet, very good to eat” in Hawaiian is also known as Ono. Built like a torpedo, they are fast swimmers. A Wahoo is a close relative to the King Mackerel. Wahoo feed near the surface in 30 to 50 fathoms along coastal ledges and are occasionally caught in open deep water. The vast majority of Ono are caught in Hawaiian waters by trollers.
This well-known Pacific fish is deliciously cooked in a variety of ways. The fillets of the Wahoo are white and firm with a flaky and delicate texture. It’s flavor is mild. Wahoo is delicious saut’ed, baked, broiled or fried. Hawaii Wahoo is an excellent source of healthy, extra lean protein. It is also low in saturated fat and low in sodium.

Notes from our buyer
Halibut season will continue until the official cut of date of November 6th, unless quota has been met before then. We still a few more months. We have new shipments of Halibut arriving this week.
American Red Snapper
We were able to get fish from Galveston this week. Whole fish ranging in size from 1-2, 2-4, and 4-8.
We have a great shipment of fresh Domestic Crabmeat this week. Prices have come down, and we are getting in twice a week from Louisiana. Call your sales rep today to place an order.
East Coast Oysters
We have a nice variety of oysters this week from the East Coast. Make sure you are on our East Coast oyster list that we send out every week.
Gulf sacks and gallons are available. This week we have standard gallons, select gallons and oyster jars.
The availability on jumbo sized redfish (2.5-3lb) has improved. Extra Jumbo (3lb and up) are in decent supply. Striped Bass is a great option this time of year as well.

Scallops
Scallop prices are holding steady this week. We expect decent supplies for the coming weeks.
Tuna production is looking good with prices holding steady. We will have great 2+ and #1 fish later this week.

We have a variety of seabass options. We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are continuing to move up.
Crawfish season has ended. We have Frozen Cooked Crawfish for your whole crawfish needs.
Ever tried it? This is a great fish that is perfect for grilling or baking. The ferocious-looking wolfish gets its name from the sharp, protruding teeth it uses to feast on lobsters, clams and other shellfish. Found from southern New England to Greenland and the Barents Sea, the bottom dwelling cold water creature is primarily a bycatch of trawl fisheries targeting cod, haddock and other ground fish. Iceland, which has a direct fishery for the species, is the largest producer.
The larger sizes of the Ruby Trout are getting harder to get. The fish are not growing as fast as we would like. For the next month 8-10 oz and 10-12 oz Ruby will not be available.The rainbow trout supply seems to be stable. The variety of the cuts and sizes of this fish never cease to amaze me. There are many options to meet your menu specifications.
