striped bass

___

Striped Bass

Striped bass have silver-white skin with distinctive black horizontal stripes. They are mild, delicate, and slightly sweet in flavor. The flesh is bright white, flaky, and moderately firm. Frugé’s striped bass matures in a natural pond environment which is monitored around the clock all year long. These fish have no antibiotics, no hormones, and no pollutants. Harvested fish are chilled in an ice slurry, graded, boxed, and immediately transported from pond directly to Frugé Seafood, then trimmed to your specs and delivered to you. It doesn’t get any fresher than that!

Notes from our buyer

Gulf Oysters
Louisiana is up and running pretty well.  We will have Goldbands and Wine Islands all week.  Our guys in Texas are transplanting this week.  We have some sacks in this week and hopefully will be back to normal next week.

___
Salmon fillets

Chile is celebrating their Independence Day for three days, so we will have some nice Bay of Fundy salmon from Canada next week to make up the missed delivery.

___
American Red Snapper

The Mexican fleet is starting to fish for American reds and grouper more.  The Europeans are putting pressure on them to drop the octopus price, so they are freezing the product and fishing for fish.  Louisiana and Texas are starting to catch more as well.

Rainbow ‘Green’, Golden, and Ruby trout

Green trout is what the guys on the farm call the regular rainbow trout.  Since they have ruby and golden as well, it is just a term they use to distinguish between the three.  Our ‘green’ trout is what every sales person calls rainbow trout.  Red and golden continue to be very tight.  The end is not in sight yet.
