Canadian Swordfish

 

-Canadian Swordfish

Swordfish is a highly migratory, predatory fish characterized by a long, flat bill. It is low in calories (130 calories per 3 oz.) and high in protein (22g). The flesh can range from white/ivory to pink or orange. The color variations do not reflect quality. All swordfish meat turns beige in color after cooking. Canadian sword is much more flavorful due to its fat content.  The product also lasts longer due to the fact that it resides in much colder water.  Canadian fish are firmer and easier to cook.

Canada is the first country to offer its entire swordfish catch to the marketplace bearing the Marine Stewardship Council’s eco-label. The Marine Stewardship Council is an independent non-profit organization which sets a standard for sustainable fishing. The MSC works with partners to encourage sustainable fishing practices.

Branzini

This is a great “something different” fish that seems to be high on everyone’s wish list lately.  This product has a lead time on ordering, so make sure your Fruge Rep is tuned in to your menu changes.

Mahi
Mahi prices are still dropping.  It’s a great opportunity to put this fish back on your specials board.

Wild Salmon

The wild salmon season is in full swing and prices are great. There is a Canadian Sockeye run so that season has re-opened.  We also have Alaskan Coho and King Salmon in house.  This beautiful wild salmon direct from Alaska to your table will be the talk of the town.  Don’t miss out.  Get with your Fruge rep to order your product today!  .

East Coast Oysters 
James Rivers are very tight (if available at all) this week.  Be sure to sign up for the weekly East Coast Oyster list and let your Fruge sales rep know if you need flavor profiles or are requesting a specific oyster.  Pre-orders are the best way to ensure availability of your favorite oyster. The Vibrio season is upon us.  Each state has their own plan to ensure oysters are being properly handled throughout the distribution chain.  Only accept product when the temperature is 45° or less, refrigerate all shellfish immediately, and ensure product is properly iced.  Keep shellfish tags on or with the original container and on file for 90 days.

Redfish & Striped Bass
This product is grown right here in Texas, which gives you the freshest fish possible.  We order this product straight from the farm, so keep us informed if your usages change, so we can be sure to keep you supplied with the freshest product.

Salmon

Chilean Salmon product will be tight the week of September 22nd due to a holiday in Chile.  Chilean salmon, North Sea salmon, and Canadian salmon prices are holding steady.  Check with your sales rep for case discounts if you are a volume user.

Gulf Oysters

Prices are up and product is still short.  The oysters that are available are small.  No Oyster leases will be on transplant for the next two weeks.  We will experience shortages on Gulf sacks.  Prices are going up next week on Gulf Sacks.  Goldbands will be available for Thursday deliveries; thankfully, the machine has been fixed.

Snapper 

American Red Snapper prices are stable.  The product is still tight, but available.  We also have 2-4 Lane Snapper.  Call your sales rep for all information.

Halibut

We have beautiful 20/40 size product in house. Call your sales rep to place your order before this wonderful product is gone!

Scallops

Scallop prices are stable. We are exploring every option to get the best price and best quality product.  Please give us feedback on the new beautiful product we are buying straight from the boats.

Tuna 

Tuna prices are up this week. We do have both #1 and #2+ grade product and are expecting more daily.  Also, Hawaiian Albacore tuna on the grill is a great sustainable option for your summer specials boards.

Grouper 
The grouper supply and prices seem to be stable this week.  Let your sales rep know if you are interested in this product.  The grouper supply will start to get a little tight as the boats begin fishing for octopus.

Black Drum 
We are expecting more drum tomorrow. This product sells fast! Don’t miss out; get with your sales rep for an order.

Fresh Crabmeat 
Domestic Crabmeat is a little tight this week. Call your sales rep today to place an order.  Venezuelan crabmeat is on conservation through September.

Domestic Catfish 

As we move into the summer months, catfish product gets tight, especially in the larger sizes.  Please make sure your rep knows your needs.

Seabass
We have a variety of seabass options.  We continue to carry H&G 20-30 kg as well as a smaller 10-20 kg if that is more of what you’re looking for. Prices are holding steady.

Live Lobsters 

We offer a full range of sizes of live lobsters straight from Maine and Canada.  Order today and we will get them to you tomorrow.

Rainbow ‘Green’ and Ruby Trout 

We are starting to see some of the effects of summer months on the trout supply; similar to that of the catfish. Supply tightens during the summer months, especially with the larger fish.  The farm is expecting to see an improvement in supply levels by the end of this month.  The variety of the cuts and sizes of this fish never cease to me amaze me.  There are many options to meet your menu specifications.
