FISH OF THE WEEK
A member of the sea bass family, barramundi is native to Australia’s northern tropical waters and parts of Southeast Asia. Barramundi is a versatile and eco-friendly fish. The fish was named by the Australia’s Aborigines, meaning river fish with large scales.
Barramundi has a firm, moist texture and large flakes. Raw flesh is pearly pink; cooked meat is white. The fish is prized for its sweet, buttery flavor. Small barramundi are milder in flavor than larger fish. The few bones in the fish are large and easily removed.
An interesting fact about barramundi is that virtually all barramundi are born male, then turn into females when they are 3 – 4 years old. This means female Barramundi can only be courted by younger men!

Icelandic Cod
Icelandic cod is a mild white fish with tender texture. A popular choice that is low in fat and very versatile. We have shipments arriving twice a week. Bad weather this week has caused some issues with the catch, and we expect prices to rise. Call your sales rep for pricing and availability. Iceland continues to be a very strong and sustainable resource.
Arctic Char
Arctic Char is a unique strain of saltwater char sustainably farm-raised in Iceland. Often compared to salmon and trout, Arctic Char has a distinct, sweet buttery flavor and firm pink flesh that sets it apart from other fish on the market. We get this in twice a week; ask your sales rep for more info.

East Coast Oysters
Make sure you are on our East Coast oyster list that we send out every week. We have a generous variety in Canadian and US East Coast oysters. Most East Coast oysters are pre ordered the week before, so be sure to reach out to your account manager for availability and pricing. Blue Point availability is much improved.
Gulf Oysters
Louisiana harvest areas have been re-opened. However, limited number of harvesters has product limited. The Texas Gulf has re-opened. However, storms came through last night that may cause some closures due to an abundance of rain. Currently private leases in Texas remain open. Shucked product remains limited as they are ramping production back up. We should see improvement on gulf sack availability this weekend. Please talk with your sales rep for pricing and availability. We have Frozen shucked oysters as a substitution option.

Striped Bass & Redfish
Redfish availability is limited this week and expected to continue. Farms are still working through the large kill off from February’s freezing temperatures. We continue to have multiple shipments throughout the week. Non-domestic Redfish from Mauritius will continue to be available. Wild Isles Natural Salmon
This salmon is naturally raised; Antibiotic Free, Chemical Free, Preservative Free, and Hormone Free. The feed is comprised of all natural and sustainable resources. And unlike other farm raised salmon Wild Isle Salmon is raised in the open ocean of the Shetland Islands, and not in a Loch or Bay like other farms raised salmons.

Scallops
U10 Dry Scallops availability continues to be limited; we continue to see weekly increased prices due to a decrease in supply of the larger sizes. U12 and 10/20 Dry Scallop will be a great option during this time with their attractive pricing and abundance in the catch.
Tuna
Tuna availability is limited this week, which has prices up. We have multiple shipments arriving weekly. We carry 2+ and #1 tuna. Call your sales rep for availability and pricing.
