Bay of Fundy Salmon Fillets

Inner Bay of Fundy Salmon are a very unique population of Atlantic Salmon. Although they may look a lot like other Atlantic Salmon, genetic studies show that they are quite different. Like most Atlantic salmon, these salmon begin their lives in freshwater rivers before heading out for feeding grounds in the ocean. However, once the Fundy salmon leave these rivers in Canada, they do not participate in a long distance migration to the waters around Greenland. Instead, they spend a year or so feeding within the Bay of Fundy before returning to their home rivers to spawn. This unique behavior along with traits like earlier maturity and high survival rates between spawning periods, make the Bay of Fundy Salmon distinct from other Atlantic Salmon populations.

Gulf Oysters
Galveston Bay is still shut down.  We hope to hear back about the samples this week, but shell stock will probably not be available until Monday.   Louisiana may have product for Friday, but they are waiting on the areas to get sampled and be cleared as well.

American Red Snapper

We will have some nice American reds all week.  Fishing is still tight, but the fish is nice and fresh!!!

Wild Coho Salmon
 

We are hoping to receive our first shipment of Copper River cohos this week.  Prices are better and hopefully the fishing is better as well.

Swordfish

Prices are right and production is rolling.  Take advantage of this while it lasts.

Grouper

Grouper is still very tight.  Octopus season in Mexico is really hurting the availability.

Striped Bass

Our farmed striped bass is from right here in Texas.  It is harvested, transported, prepared, and shipped under controlled temps.  This increases the quality and shelf life for you.

Halibut

We have some beautiful halibut in.  Keep it on the special board; it won’t be around forever.

Redfish

Production has slowed down again.  Looking like only extra jumbo redfish for a while with tight supply.

Black Drum

We will have some nice drum for the week.

Tuna

Tuna is extremely tight and expensive.

Mahi Mahi

We are seeing a little more mahi in the market.  I hope this marks the beginning of the new season.  Prices are not great but are much better than the past few months.

Fresh Crabmeat

Fresh domestic crab meat is tightening up a little.  August is typically a rough month, so we hope to continue to see plenty of crab meat in the next few weeks.
Steelhead
Steelhead will be in for the weekend.

Marlin

We will have a small shot of marlin for the weekend.

Domestic Catfish

Prices are nice and production is good on 5-7 sizes and up.

Pricing is steady and quality is great.

Prices are steady, and the product is excellent.

Rainbow ‘Green’, Golden, and Ruby trout

Green trout is what the guys on the farm call the regular rainbow trout.  Since they have ruby and golden as well, it is just a term they use to distinguish between the three.  Our ‘green’ trout is what every sales person calls rainbow trout.  Red and golden continue to be very tight.  The end is not in sight yet
