Shrimp and Scallop Toasts

Shrimp & scallop toast

1/2 pound clean shrimp

4 oz scallop

1 large egg

1 tsp tapioca starch

2 ea scallions, sliced

1.5 tsp grated ginger

1 tsp sambal hot sauce

1 tsp dark soy

1 tsp fish sauce

1 tsp black and white sesame seeds for garnish

Salt and pepper to taste

Sliced white baguette

In a food processor, add all ingredients and pulse until a chunky paste is formed. Spread a thick layer on a slice of bread. Heat oil in a pan to 375 degrees, and deep fry the bread with the spread on it for about 3-4 min. Cool on paper towel and sprinkle with chopped scallion and sesame seeds.
