Tuesday, Friday, and Saturday. DFW area will have deliveries on Monday afternoon,
Tuesday morning, Wednesday morning, Friday morning and afternoon, and Saturday morning.
Louisiana will have deliveries on Tuesday and Saturday.

Here are the main criteria used to assign the grade:
• Color & clarity of flesh: For #1 grade, the meat should be vibrant red (for species like yellowfin) or whichever the ideal hue is, and slightly translucent (not dull, opaque, or cloudy).
• Fat content / marbling: Higher fat content (especially in certain species) often corresponds to better texture/flavour and higher grade.
• Texture / firmness: Meat should be firm, with fine texture (not coarse, mushy or soft).
• Size & shape of the fish: Larger fish often yield better grade loins (for certain species) because of fat deposition, muscle size, yield etc.
• Absence of defects: No “rainbow sheen” (discolouration), no excessive blood-lines, minimal bruising, no burn (freezer or acid burn) etc.
